Leftovers are a Beautiful Thing...Eggplant Ricotta Bake
This evening, it's just me for dinner since hubby has a dinner meeting tonight. That's actually a good thing because I have plenty of Eggplant Ricotta Bake leftover from last night's dinner. Not only do I get a night off from cooking...but I get to eat eggplant again (which is always a good thing to me)! :-) I snapped a couple of quick photos to prove that leftovers can be beautiful in more ways than one!
