Wednesday's Wonderful Leftovers...

This evening I didn't need to cook dinner because I still had plenty of leftover Greek Style Spinach-Feta Pie that I made last night.  I reheated a couple pieces for hubby and me and then tossed a little side salad...and "boom"...dinner was on the table in about 10 minutes. I actually had a piece for lunch today too and have one more left for tomorrow's lunch.  I have gotten a lot of "mileage" out of this one little pie!   I snapped a couple photos below.  Enjoy!

You did it again girl! This pie is out of this world! So flavorful and light but thoroughly satisfying. I think that's what I love best about eating this way, I eat so well but never feel stuffed the way I did when I ate breads, grains and starchy veggies. Your recipes and information that you so generously share really help so many people,as we say here in the South "bless your heart". Thanks . Maria

I finally got all the ingredients to make your southern style biscuits.All I can say is WOW,WOW,WOW! My husband ate 3 even before they made it to the table!I am making this pie tonight since I have everything for the crust.Thank you so much for all your grain free recipes.Much love from a "southern belle"
