Tonight I decided to make my Chicken Scampi-ish over Rich and Thick Parmesan Cauliflower Mash for dinner. It was quick and simple to do -- especially since I had leftover Parmesan Cauliflower Mash from last night's dinner. I love to serve it on top of that -- it is excellent. It tastes so much better than serving it over boring old pasta. The cauliflower mash is rich, thick and decadent since it is cooked in chicken stock, then mixed with cream cheese, cream and Parmesan cheese and then topped with the flavorful lemony, buttery, garlicky, herb and wine sauce in the Chicken Scampi-ish.
