Saturday's "Illegal Breakfast"...

Happy Saturday!  This morning we awoke to a very dark and gloomy day here.  It is only 63 degrees and there is a heavy mist falling...just enough to trick you into thinking it isn't "raining"...but enough to soak you if you were to spend 5 or 10 minutes outside.  Hubby left early this morning for an all day meeting, which leaves me to my own devices today!  Scary (shopping) and exciting (shopping)...all rolled into one!  LOL My oldest son is on his way over so we can do a little furniture shopping for his new place -- he still has no place to sit down and eat (as in table and chairs or bar stools). So, today is a great day to do that with the gloomy weather. I made myself the most awesome (and simple) breakfast this morning...and I'm fairly certain that this breakfast is probably "illegal" in at least 6 states...and it's most definitely illegal if you are trying to eat healthy and lose weight (NOT!!!).

My "illegal breakfast" consisted of a slice of leftover cold pizza AND a chocolate chip cookie from last night's dinner...with a little square of 85% chocolate thrown in so I make sure I get my antioxidants in for the day!  ;-) Seriously though...I know the thought of cold pizza probably makes some stomachs turn, but I have always loved a slice of cold pizza for breakfast.  And who, in their right mind, has a cookie for breakfast?  ME!  LOL  I needed to do a little celebrating...as of this morning, I am down 67 pounds and that's eating the way my previous thinking and "what I thought to be healthy (as in whole grains)" would have caused me to GAIN 67 pounds instead!  It truly is amazing how removing wheat, grains and added sugar made such a profound difference, not only in my physical health, but in my body (and mind) as well. I have more energy than I know what to do with. I am truly thankful, grateful and appreciative EVERY single day...and while I wish I had known this little "secret" earlier in my life...I am forever grateful that I picked up Dr. Davis' Wheat Belly book and read it last summer.  It is, without question, the summer that changed my life forever.  I would never have believed it possible if I had not actually tried it and witnessed it myself. All the necessary food groups are included...and more importantly the unhealthy whole grains non-existent!

Thank you so much. That looks yummy. Not only "illegal" but healthy too. No pizza or chocolate chips other than that would be healthy. I've also had your Greek Spinach Feta Pie for breakfast and lunch and dinner. All in one day, LOL. Honestly I can't get enough of it. It is so good. I've made it twice now and plan on making it again soon within the next week. I gave a slice to my Mom and she said it couldn't have been better! And I am a very inexperienced cook. As in I never used to cook. Thank you for all your hard work and ingenuity and creativity and generosity in sharing these recipes and blessing all of us. I appreciate it so much. :-)

I have been grain free since the beginning of the month and have really enjoyed checking out your site. Today I made your cookies and I must say they were soooooo much better then the ones in Wheat Belly. I didn't have ricotta so I used light cream cheese, and they are simply divine! We will have to see if they pass the husband test. I've also made your pizza crust which turned out great too! I read one of the comments posted about using it as bread for a sandwich and tried that. It was great! Thank you for such great recipies!!! Next on my list will be the Greek Spinach Pie.

Thanks so much, Loretta! It honestly is comments like yours that make every single minute of this worthwhile! I'm also glad to find someone else that enjoys the Greek Spinach-Feta Pie as much as I do! I sometimes feel like a weirdo making it as frequently as I do...LOL. But it is easy to make, I also have leftovers to enjoy a few more times and I am always a little sad when I eat the last slice! Pressing out the crust as opposed to having to pull out a rolling pin to make a crust saves me from feeling the need to pull out my hair, too! Even though I like to cook...I always hated rolling pie crusts...it makes a mess, there's flour all over the counter, floor and me...this one is a breeze. Thanks so much for your kind words -- I am so happy you are enjoying my blog! :-)

When I was growing up, we made homemade pizza for Christmas Eve. My brothers loved eating the cold leftovers the next morning for breakfast. You are not alone! It's interesting, the more I stay on this pathway of eating, the more I find myself enjoying more cold food. So your cold pizza doesn't surprise me! And by the way, I made pizza with your crust again tonight. I finally did what you said and used parchment paper. What a difference! I also used my cast iron griddle to bake it on. It worked out perfectly. So grateful for all the recipes you've developed.

Hi Kathy! Home made pizza for Christmas eve...that sounds like such an awesome and unique idea. Of course I would have to add some green and red on there for the toppings...LOL. When I was a kid, when were at the beach during the summer...we would go out for pizza and always bring leftovers back and we enjoyed that for breakfast the following morning -- it was like a "special treat". My mother always said she just didn't know how us kids could eat cold pizza...but we loved it. Glad you tried the parchment paper method for spreading the pizza crust -- it is so much easier and quicker to make it even and thin. If the outer edges get a little too thin I just use the rubber spatula to gently tap it back into a little crust "edge/rim". I bet your cast iron griddle made a nice crust! So glad you are enjoying the recipe(s) and thanks so much for your kind words, always! :-)

Thanks, Sami! I actually started eating cold leftover pizza for breakfast as a kid while spending summers at the beach. It always seemed like a special treat, but it always made my mother "wince" that we ate it cold! :-)

Yes I believe the greek spinach pie is my most favorite. I bought it to my cousins the other nite, she was having pizza and ice cream so I bought my spinach pie and yogurt and blueberries for dessert for myself and she was jealous of my pie and said it looked and smelled good, she wished I would have had extra. smile. I am having a bit of a steep learning curve with the no grains low carb thing though as I have gotten too skinny with it. I want to gain 10 lbs back and am not having any luck with it. When I am eating like this, I do not have the appetite that I once did and with nixing the grains and carbs the weight literally melts off of you. I guess I need to eat more but not sure how to do it without raising blood sugars and eating the wrong things. But yes thank you for your blog. It's so well done and encouraging.Also, when I make the pie, everyone is so impressed that I "made" the crust and it is so good. Makes me feel like a "real" cook. smile

Hi Loretta! I'm thinking if you want to put some weight back on without raising your blood sugar, that maybe increasing your fats might help since they typically don't have carbs. That might be a question you post for Dr. Davis on his WB Facebook page. He answers a good bit of people's questions...and there are always others that will probably chime in as well. As far as cooking goes, if you can find just a few things you can make well...people with think you are an awesome cook! Also, the more you cook, the better you get and the easier it is for you. I used to think that a recipe had to be really complicated, long and hard for something to be "gourmet"...the reality is, if you can cook something simple and REALLY enjoy it...why would you ever want to make something difficult and time consuming if the end results are the same. I'm so happy you enjoy the spinach-feta pie and using that same crust (without any seasoning) you can branch off and make other types of quiches or pies, etc. It's a good base crust that turns out perfectly every single time. Thanks for letting me know you enjoy it so much! :-)

OOh yes. I was thinking when I first made the spinach pie that I could leave out the savory stuff and still use it b/c it is such a good base! With fall coming, I am thinking of making a pumpkin pie!! My friends laugh at me now bc when I go shopping with them, I always want to look at kitchen gadgets and such. This is a side of me they have never seen. ha ha. Good advice about cooking not having to be long and complicated. I think that's why I was so afraid of it and avoided it for so long. But you can't live this kind of lifestyle without cooking. :-) I'll check the Facebook page. Thanks for all your help.

Hi Loretta! Too funny that being wheat free has brought out the "cook in you"...you may find that you like it. Eating wheat free can be as easy or complicated as you want it to be. When you have time and are in the mood...that's the time to experiment with recipes that take a little more time. Pumpkin pie does sound good...I'm looking forward to fall and making cool weather meals, too. Enjoy your new cooking skills! :-)

Being wheat-free seems to have brought out the cook in me, too! :-) A couple of reasons might be that I know I'm cooking healthy *and* tasty stuff, particularly when the recipes and inspiration come from your wonderful blog!

BTW, cold pizza was always a favorite of mine for breakfast. I can't really think of anything better ... except for cold pizza *and* a chocolate chip cookie! :-)

Hi CyberSis! I have always loved to cook...but like many of us, easily slipped into eating out more than we should...and all the pre-packaged convenience foods didn't help either. I can't tell you how many pounds of "healthy whole wheat pasta" I ate over the last few years! LOL I think all the convenience food on the market might save time when it comes to preparing meals...but at the high price of good health in the long run. I am quite happy to be in the kitchen again! Glad to hear you enjoy cold pizza, too! I hope you are doing well! :-)
