Eggs over Bacon & Onion Slaw - Low Carb

This morning hubby and I woke up early to get our walk in before the rain began. It was already threatening looking when we left the house and only got darker as we went along. Fortunately we were spared and within 5 minutes after we got back in, the sky opened up. We are supposed to have rain most of the day today and more in the forecast tomorrow.

When we got back in, I decided to make eggs (for me and Spike to share). I also prepared some crispy bacon to go with our eggs. When I was grabbing the eggs from the fridge, I noticed an open bag of coleslaw mix left from the coleslaw I made earlier in the week (I had bought a big bag from Sam's Club so I had lots left). I sauteed a large handful of the slaw with diced Vidalia onion to serve as my "breakfast hash." I cooked the bacon first and moved it to a plate and then sauteed the slaw mix and onions in the same skillet and crumbled a couple strips of bacon into the crisp-tender slaw. I moved that over to a plate, wiped my skillet out and then cooked the eggs in the same skillet. After they were cooked, I slid them on top of the bed of hot bacon and onion slaw. It was delicious and a great way to use up the leftover slaw mix. I snapped a couple photos below. Enjoy!

Another pair of winners for your eats today!! Isn't it incredible just to real, fresh, good, homemade food?!! And all the more so when it is easy to prepare and doesn't take very long.

I had a similar thing for first meal today, except your cabbage mix was my white radishes and your bacon was my uncured beef sausage (forget the exact type but I loved it)! Had 2 eggs on top, like you did!! I just kept thinking how sinful the whole thing seemed, yet it wasn't, and yes, I will make it again!

Hi Alice,

Your breakfast sounds great, too! I've never had white radishes before. Are they mild? You are right, it is great to eat real, fresh homemade food. While I have cooked for many years, we all got pulled into using more convenience foods as we prepared our meals and they had all kinds of unhealthy ingredients added.
