Easy Hickory Grilled Burgers w/ Spicy 3-Alarm Cheese

It's a gorgeous day here today but unfortunately, I've been under the weather for the last few days. I actually skipped eating dinner altogether last night. This afternoon my brother was itching to grill for lunch so rather than make both lunch and dinner, we had a late lunch to cover us for both meals. We made burgers using 85/15 ground beef and seasoned them with salt, black pepper and a bit of  Lea & Perrins Worcestershire Sauce. He did all the grilling and used his Weber Jumbo Joe charcoal grill with added hickory chips to cook them on. I added some diced onions to my burger and he and hubby enjoyed their burgers on rolls. It only takes about 7 to 8 minutes go cook them once the grill is hot. I sliced up some spicy 3-pepper cheese to top our burgers with (hoping it might help open up my sinuses as well). They turned out great. I had broccoli on the side. We made extras just in case we get hungry later but I think this may last me through the rest of the day. Sinus problems are no fun. I have never had the problem but my husband and sons have. Hope you are feeling better soon.

We love to grill burgers too. Never heard of this cheese.

You must have got your cheese at Sam's? I recently bought the same wheel of cheese, ha ha. As a matter of fact, I just grated the rest of it yesterday to be used up this week. Tonight it will top chicken breasts and in a couple more nights it will be used with taco salads. It's definitely a sinus-clearer!

Sorry to hear that you've been feeling poorly. Hope you'll be feeling much better very soon. How special to have your brother cook for you! That, along with the spicy cheese, is sure to perk up the appetite! :-) We haven't done any grilling yet, but it's coming soon ... very soon ... We have some lovely New Zealand lamb chops from Sam's Club, not to mention some nice burger meat. Speaking of "under the weather," we're in line for some severe storms tonight. Yes, I did get it at Sam's. They really have a nice selection of cheese now don't they! And you are right, it is most definitely a sinus clearer! I used it in an omelet with bacon the other day and it was awesome. I've really needed the sinus cleaning part because I've been sick this past week. :-)

Hi Charlotte,

I actually think I may have the flu, believe it or not. It began abruptly last week with a sore throat and fatigue and moved quickly to pounding headache, severe sinus congestion, cough, fever and chills and achiness. I've actually been home sick the last couple of days and am hoping to return tomorrow. While I'm not completely recovered yet, my fever finally broke today. Only I would get the flu in April! :-)

Thanks! I actually think I might have the flu, believe it or not. I've got most of the symptoms...headache, severe sinus congestion, cough, sore throat, fever of almost 102, chills, achiness...the whole works. It's definitely not a cold. My fever seems to have broke today so I'm going to try to make it back to work after being out sick the last couple of days. I have lived on the couch since last Friday. It was nice having my brother cook for me! I'm not used to that. I hope your storms weren't too bad. It looks like there have been some really bad ones recently with crazy hail, wind and flooding. Hope you and your hubby (a/k/a frittata king) are okay. :-)

Glad to hear that you're improving. The first day back at work can be tough and I'll bet you're a "tired puppy" tonight. For prevention, I've been taking 1 tsp. per day of black elderberry extract during flu season and I haven't had so much as a head cold for the past couple of years. I like the Nature's Answer brand because it contains no sweeteners of any type. It needs to be diluted in water and stevia to taste can be added if you want. If I feel like I'm coming down with something, or if I come in contact with people who are showing symptoms, I'll increase it to 1 tsp. 4 times per day. If you do come down with it, keep up the 4 tsp. as it can help you get through it more quickly.

I usually start in the fall and end in the spring. I go through a couple of 4 oz. bottles per season. So far it's worked for me. Just watch, though, now that I've said all that I'll probably get something tomorrow. :-) My last dose of the season was taken yesterday, but I'll start it up again at the first sign of trouble! P.S. We just caught the edge of the storms, so it wasn't bad at all. Beautiful today! We did have the lamb ... yum! :-) The Fritatta King and I are doing well ... thanks for asking. :-)

How are you feeling? I hope you're all recovered from your flu.

Thanks for pointing us to the "3-Alarm Cheese"! We picked up a package at Sam's a few days ago. Wow! :-) We had the cheese on hamburgers that we made from some very nice organic, grass-fed/finished, USA ground beef, also from Sam's. We bought a 2-pound package to try. It was very good. We'd buy it again. And the cheese was super! We'll enjoy the leftovers tomorrow.

This a.m. my hubby used the cheese in a new dish that he "created" on a whim: "Poor Man's Omelet." It amounted to a sort of "flat egg" strata. For each serving you fry two eggs (yolks broken.) Stack them up with a slice of 3-alarm cheese in the middle, then turn them a couple of times in the pan to warm through and melt the cheese. (We used the 10" Lodge skillet.) Delicious! Served them with Adells Cajun sausage, some veggie leftovers, and Dr. D's minute bread (which I doctored up with cinnamon, Xyla, walnuts, and Zante currants.) That was a big breakfast! I didn't even finish it and it kept me going all day!

Glad you liked the cheese. I didn't realize Sam's carried grass fed ground beef...I'll have to check my store out to see if they carry it.

Your hubby's new dish sounds delicious! I had a very nice Mother's Day. Thank you! Hope you are doing well. I finally completely got over the flu but felt exhausted for a few days after all the symptoms subsided. I've just had allergy issues the last week but know it will pass in the next couple of weeks. I need to buy more of the 3-Alarm Cheese because we finished ours up. I wish it came sliced in addition to the "wheel". :-)
