Otherwise, yes that would definitely work. When I made this pizza 3 years ago, I had only been wheat/grain free for 6 days and believe me, I was like a deer in the headlights...LOL. I'm surprised I even attempted a cauliflower pizza crust at that point! This pizza crust would probably crisp better if made in two smaller pizzas where you could flip the crust over and cook it on the other side too and crisp up a little better. Here is the link to the pizza crust I created and make now -- both because it is easier to make and because it is closer to regular pizza crust (you can pick it up and hold it) -- I usually make it in 2 smaller 10-inch pizzas but you can make it in a large rectangular crust too. Haven't noticed them there yet this season -- either than or I missed them. I have only ever eaten them raw...never cooked with them. They are really hard to find -- not sure why the local grocery stores don't carry them. Hope you like the pizza crust -- some people make them smaller and flip them over and cook a bit on the other side -- they like it better that way. The one I made was just too big to flip. It was hard enough just getting my hubby to try the cauliflower pizza...but he liked it. The PB&J bites sound delicious too! P.S.--the cauliflower pizza crust really needs to be eaten with a fork as it is a bit flimsy -- if you didn't make as large of one as I did (instead make 2 smaller ones), you could flip the crust over and bake it on the other side too that would stiffen it up better. (I found that recipe via Pinterest) They are wheat free and I thought delicious. My family didn't like them, but it was purely based on "looking weird", not taste ;) There was also a delicious wheat free recipe in Septembers Family Circle, PB&J bites.
