The coconut just gives a little more texture but is not necessary. You could use a combination blend of almond flour and ground golden flax seed (if you have it) or you can do a blend with almond flour, finely grated (powdery) Parmesan with your favorite herbs and spices. These don't get crispy in the oven like commercial fish sticks but probably would if pan fried in oil (but that's kind of messy).
