Quick & Easy "Lemon Chiffon" Tartlets

Today was an extremely hot day here.  The temperature hit 104 degrees in Atlanta.  This evening hubby picked up Chinese from our local restaurant on his way home so we could take a break at the end of the week and try to keep the house as cool as possible.  I am just praying our a/c keeps working. 

For a refreshing quick and easy little dessert, I decided to make some dainty little "lemon chiffon" tartlets topped with fresh blueberries.  I think lemon goes with blueberries just like peas go with carrots!  :-)  I picked up a package of tiny little shortbread tartlet shells from our local Kroger.  They come 16 to a box and are 1.75" in diameter.  I also picked up an 8-oz container of "Lite" Cool Whip and a 23-oz jar of California Lemon Fruit Filling.  Both the tartlet shells and the lemon filling are Kroger's Private Selection brand.  The  lemon filling is very tart and sweet all at the same time.  Since I was looking for something light and not too sweet, I mixed a ratio of 1 part lemon filling and folded in 3 parts Cool Whip.  I dolloped it into the tiny tartlet shells and topped with a few fresh blueberries...and Voila...in less than 5 minutes we had beautiful light little "chiffon-like" lemon tarts....and it did not heat up the kitchen at all.  You don't have to slave in a hot kitchen or spend hours and hours to make a delicious dessert.  They were a perfect little summertime dessert to end this unseasonably hot evening with.  I snapped a pic below for you to see.  Enjoy!

Cool Salads for a Hot Thursday Night!

Well, today we reached 97 degrees...and the forecast throughout the weekend includes triple digit days...yuck!  This evening I didn't want to heat the house up while making dinner whatsoever...so I made us big cool and refreshing salads loaded with romaine, carrots, Cherubs tomatoes, crispy red peppers and chunks of leftover chicken tenders from last night.  We drizzled our salads with light ranch dressing that I added lots of freshly ground black pepper and some cayenne pepper to just to give it a little kick.  It was quick, easy and delicious...and definitely COOL.  I snapped a quick pic to share.  Enjoy!

Wednesday's Quickie Chicken Biscuits

This evening we had to take our puppy back to the vet because he injured his leg when he almost fell off the exam table at the vet this past Saturday morning and he's been limping ever since.  That little extra jaunt made us get home later than we usually do so there was less time to get dinner on the table.  When we got home I put some frozen breaded chicken tenders in the oven that only take about 25 minutes to bake.  While the chicken baked, I made some Black Pepper Cheddar Biscuits to make chicken biscuits with.  I served the chicken biscuits with a salad loaded with Cherub tomatoes.  It was an easy dinner and we were finished by 7:30.  Not too bad!  I snapped a picture below for you to see as well as a link for the biscuits that I have posted before.  Enjoy!  Here is the link for the biscuit recipe:

Monday's Easy Peasy Dinner

For dinner this evening, we had the leftover Chicken-Ratatouille Arrabbiata Orecchiette from last night's dinner.  To spruce it up a bit I added a side salad and made a small loaf of Easy Cheesy Bread with some leftover Publix pizza dough.  I still have enough leftovers for a few more meals.  I snapped a couple of pictures for you to check out below.  Enjoy!

Sunday's Chicken-Ratatouille Arrabbiata Orecchiette Bowl

It's Sunday evening and I decided to make a big pot of pasta sauce loaded with fresh veggies and chicken so we don't have to cook tomorrow night in all this heat and humidity we've had this past weekend.  It should make at least one more dinner for us and a few lunches too.  I diced 3 medium zucchini, 3 medium yellow squash, 1 medium eggplant and sauteed it in a little olive oil until tender.  I removed the veggies to a bowl and set them aside.  I then diced a package of Perdue boneless chicken breasts and sauteed them in a little olive oil in the same pan until tender.  When the chicken was done I added the cooked veggies back to the pot and then poured in a jar of Mario Batali Arrabbiata Sauce (it is extremely spicy), covered and simmered everything on low for about 30 minutes.  I cooked the pasta while the sauce simmered.  I topped it with some fresh sliced basil from our backyard and some shredded Parmesan cheese.  It was delicious!

This weekend I didn't do much in the way of cooking because we had a sick puppy that had to go to the vet Saturday morning because of his severe allergy problems this season.  He got a steroid shot and I have only two words to say about how he has acted since then...."wacko jacko"...literally!  Now I know why Lance Armstrong is such a stellar athlete -- steroids give you all kinds of magical powers and stamina...I saw what one dose did to my little puppy!  He was ready to leap tall buildings with a single bound...that little guy was on overdrive ALL night long!  Needless to say, none of us have gotten much sleep so we have just sort of laid around and napped here and there when we could.  My big outing was to Publix yesterday for about 30 minutes!  :-)   It felt good to cook a home cooked meal full of veggies again this evening.  We do go through a whole lot of fresh produce in this house.  I snapped a pic of our meal below....check it out.  Enjoy!

Thursday's Crisp, Cool, Quick Salad Bowl

This evening, hubby had a training class to attend after work and will be home late.  That means I only needed to make dinner for me tonight.  I had a leftover grilled chicken breast from last night's dinner that I diced up and used to make a big, cool, crisp salad for dinner.  It was very simple...just romaine, grilled chicken and tons of quartered Cherubs tomatoes...I drizzled on a little Kraft Honey Dijon dressing and Voila...dinner was ready.  I snapped a picture for you to see below.  Enjoy!

Heirloom Tomato & Mozzarella Ravioli w/ Summer Squash, Zucchini & Tomatoes

This evening I finally decided to make Pasta Prima's Heirloom Tomato, Basil & Mozzarella Ravioli that I picked up at Costco a couple of weeks ago.  I didn't want to put anything on them to compete with the delicate flavors of the ravioli so I decided not to put any type of sauce on them.

I diced 2 small zucchini, 3 small yellow summer squash and quartered a couple of handfuls of Cherub cherry tomatoes.  I sauteed the zucchini and yellow squash in a little bit of olive oil until tender while the ravioli was cooking.  The ravioli actually only take about 4 minutes to cook...the longest part of the process is waiting for the water to come to a boil!  Once the ravioli were done, I drained and tossed them with a little bit of olive oil, added the cooked zucchini and yellow squash and then tossed in the tomatoes at the very end.  I didn't want the tomatoes to cook, so I let them heat gently along with the hot ravioli so they would maintain their fresh flavor as well as their brilliant color.  I added a pinch of sea salt, sprinkled on some cracked black pepper and topped with shredded Parmesan cheese.  I served this delicious summer medley alongside grilled boneless chicken breasts (that were seasoned with some Spicy Montreal Seasoning).  It was an absolutely delicious summer meal.  The Heirloom Tomato-Basil-Mozzarella ravioli are very delicate and went perfectly with the delicate flavors of the zucchini, squash and fresh tomatoes....this meal screamed "SUMMERTIME".  Both hubby and I enjoyed it.  I would definitely recommend these ravioli if you can find them.  Check out a couple pics of this beautiful and delicious meal below.  Enjoy!

"Welcome Summer" Salad Bowl

It's Tuesday and it is now officially SUMMER...well, in a few hours!  To welcome summer in, I decided to make us ginormous salads for dinner.  We are having huge bowls of fresh romaine lettuce, sliced carrots, quartered Cherub cherry tomatoes, crispy red peppers, and chunks of chicken tenders that I cooked in the oven.   I also got to try out my new salad spinner since I now buy my own romaine lettuce and cut it up instead of using bagged salad.  I occasionally will used bagged salad in a pinch but once I went back to buying and cutting up my own lettuce again...the difference in freshness was unbelievable.  Bagged salads begin to deteriorate almost as soon as you open the bag (some even look bad in the store days before their expiration dates).  I also find that more and more they are using lots of the "heavier" stalks than the actual green leafy lettuce leaves.  I usually wash my lettuce and then wrap it in paper towels to dry before cutting it up...but finally decided to see if a salad spinner would work better...and guess what -- it does (and it's actually fun to use).  Yahooooooo!!!  I washed my lettuce, cut it up and gave it a few good spins in the spinner and "voila"...perfectly dried, crisp, green...FRESH lettuce for our salads.  Bye bye bagged salad and hello fresh!

Chicken Salsa Con Queso Quesadillas

This evening I had some leftover rotisserie chicken that needed to be used up so I decided to make quesadillas...they are quick, simple and good.  I shredded the leftover chicken with 2 forks and placed it in a bowl; added a couple of heaping tablespoons of hubby's favorite "salsa con queso" cheese dip (made by Tostitos) and heated it in the microwave for a couple of minutes.  I spread the chicken mixture on one half of a whole wheat tortilla along with some diced tomatoes, folded it over and grilled it in the panini pan for a few minutes on each side.  I topped it with shredded lettuce, reduced fat sour cream, a little shredded cheddar cheese and more diced fresh tomatoes...and BOOM, we were eating Chicken Salsa Con Queso Quesadillas.  It made you want to scream...Ole̒ (well...maybe that's a little dramatic)... but it was good.  Check out a pic below.  Enjoy!

Father's Day Cookout & Pecan Tassies for Dessert

This evening we grilled out for Father's Day dinner.  Hubby had a ribeye steak and the non beef eaters (like me, for example) had bourbon marinated salmon.  We had big baked potatoes and roasted asparagus for our sides along with shrimp cocktail.  So yes, some of us had surf and turf and well...some of us had surf and surf!  ;-)

One of hubby's favorite desserts is pecan pie...so instead of making a big pie I decided to make cute little 2-bite sized pecan tassies.  I have made pecan tassies for over 25 years now but I usually only make them at Christmas time since there are so many other cookies and treats that time of year.  They are delicious and not as sweet as pecan pie since they don't have any corn syrup.  Check out my recipe below as well as some pictures of our dinner and our dessert.  Enjoy!


Pecan Tassies

4 oz. (1/2 of 8-oz. pkg.) cream cheese, softened
1/2 cup (1 stick) butter or margarine, softened
1 cup flour
1 egg
3/4 cup firmly packed brown sugar
1 tsp. vanilla
4 tablespoons pure maple syrup
1 cup finely chopped pecans
24 pecan halves (to add to top of tassies)

Beat softened cream cheese and butter in a medium bowl with electric mixer on medium speed until well blended. Add flour; mix well. Cover and refrigerate at least 1 hour or until chilled.

Divide dough evenly into 24 balls. Place one ball in each of the 24 miniature muffin pan cups; press onto bottoms and up sides of cups to form shells. Set aside. Beat egg lightly in small bowl. Add sugar, vanilla and maple syrup; mix well. Stir in chopped pecans. Spoon evenly into pastry shells, filling each shell about three-fourths full.  Top each pecan tassie with a pecan half.

Bake in a preheated 350 degree oven for 25 min. or until lightly browned (mine were ready in 23 minutes). Let stand 5 minutes in the pans; carefully remove to wire racks to cool.




Happy Father's Day!

Happy Father's Day to all the fathers out there!  Sadly, my father is no longer with me, but his memory continues to live within mine and I take it everywhere I go.  And thankfully...I am a "chip off the old block".  It's funny; all my life I was told I looked just like my father...and as a young girl, I always felt a little bit insulted because I thought maybe they were insinuating that I looked like a man.  I know better now; much better...I actually find it comforting when I look in the mirror.  You see, I don't just have his hair color and his features and many of his personality traits...but I have his eyes and there are times that I feel like I am looking into his instead of mine.  I miss him every single day.  I was and always will be his "Turkish Delight" (which is a type of candy, in case you didn't know).  Happy Father's Day Dad!

This morning, it is gorgeous, pleasant and breezy and a top 10 kind of day here.  For breakfast, I made myself an egg and white cheddar sandwich on nutty-grainy toast (Arnold's Health Nut Bread, one of my favorites for toast) and a cup of Donut Shop coffee and ate it outside on the patio in the secret garden...by myself.  It was a peaceful and calming way to start the day.  I snapped a couple of pics below.  Enjoy!

Roasted Chicken w/ Kale & Spinach Ravioli and Carrots

Today we just relaxed and took it easy for most of the day.  Later in the afternoon we decided to make our Costco run and pick up a few items since we didn't need much.  For dinner I decided to try one of the new flavors of ravioli we picked up from there last weekend...Pasta Prima's fresh Superfood Kale & Spinach Ravioli.  It’s a blend of kale and spinach complemented by five gourmet cheeses: Parmesan, Romano, Asiago, Mozzarella, and Ricotta.  I picked up a rotisserie chicken on our way home from shopping and then cleaned, sliced and cooked some fresh carrots while the ravioli cooked.  The ravioli only require about 3-4 minutes to cook.  Since I wanted to be able to taste the flavors of the ravioli, I wanted a light and mild sauce to accompany it.  I opened up a jar of Classico's Roasted Red Pepper Alfredo sauce and poured about half of the small jar in a pan and thinned it with skim milk so it wouldn't be heavy and we'd still be able to taste the flavors of the spinach, kale and cheeses in the ravioli.  I tossed the ravioli with the heated sauce and dinner was ready in less than 30 minutes after we got home.  The ravioli was really delicious and I would definitely buy it again.  We actually have another package of it in the fridge since Costco sells it in 2-packs.  We also have plenty of leftover chicken, ravioli and carrots to have another meal with which is always a good thing!  The colors on our plate were so beautiful and it tasted really good too.  I snapped a couple pics for you to see.  Enjoy!

Saturday's Lunch Alfresco..."Garden Linguine" & "Berry-licious Sundaes"

It is so gorgeous here today...it is sunny, breezy and 77 degrees at 1:30.  I decided that today we needed to use up some of our leftovers from the week before I make another new meal this evening.  So, for breakfast this morning, we each had a piece of leftover pizza (cold) from last night's dinner with a cup of hot coffee...I know, it's kind of weird but it was good!

For lunch I decided to "dress up" Thursday night's leftover whole wheat linguine (w/ Vodka Sauce, Smoked Italian Chicken Sausage, Red Peppers & Zucchini).  I had 8 or 9 Campari tomatoes left on the counter that were almost overripe...so I seeded them, chopped them into large chunks and tossed them into the pan with the linguine noodles that were heating on the stove and cooked them for a few minutes until heated through.  I then poured in the leftover vodka sauce with veggies and chopped some fresh basil from our garden and some fresh Italian parsley and tossed it all together in the pan to heat with the linguine and tomatoes and then served it with some shredded Parmesan cheese...and Voila, we were eating "Garden Linguine".  It was so fragrant...you could really smell the fresh basil.  Because I added so many fresh tomatoes and herbs, it tasted like an entirely different meal than we had Thursday night...and I was able to squeeze more fresh veggies into a meal that already had plenty.  I love breathing new life into leftovers and making them seem like brand new.  It was a perfect summer lunch on this perfect "almost-summer" day. 

For a light dessert I made the most simple and easy "Berry-licious Sundaes" using a scoop of Kemp's low-fat frozen vanilla yogurt and some fresh blueberries and raspberries tumbled on top.  It is a delicious way to eat summer berries...especially as the frozen yogurt melts...it tastes like you are eating berries and cream.  It's delicious, simple and beautiful!  I love using fresh produce.  Check out the pics below.  Enjoy!

Friday Night is Pizza Night!

I just can't say enough about how glad I am that today is Friday...not just Friday...but it's FRIDAY NIGHT and it is pizza night!  I made a pizza with Publix pizza dough, shredded mozzarella, our favorite Dei Fratelli pizza sauce...topped with Boars Head turkey pepperoni, diced red bell pepper, and chopped and seeded fresh Campari tomatoes.  It was delicious!  We are spending this evening waiting for this dummy, Walenda to fall off the wire as he foolishly tries to walk across Niagara Falls.  Personally, I think he needs to find a new hobby...let's just hope he has good health insurance!  I snapped a photo of our pizza below.  Enjoy!

Thursday's Linguine w/ Vodka Sauce, Smoked Italian Chicken Sausage, Red Peppers & Zucchini

Wow...it is finally Thursday.  This has been a long week and I'm glad it is almost over!  Tonight I was in the mood for pasta.  I cooked some whole wheat linguine (Alma's) and while that cooked I diced and browned an Aidells Smoked Italian Chicken Sausage w/ Mozzarella along with some diced red bell pepper and diced zucchini.  I poured a jar of DelGrosso's Vodka Sauce over the sausage and veggies and simmered them together for about 20 minutes and then served the sauce over the linguine topped with shredded Parmesan cheese (Sargento).  It was absolutely delicious.  The DelGrosso vodka sauce has a nice little kick to it...I love it -- it is the only brand of vodka sauce I will buy!  Check out the pic below.  Enjoy!

Tuesday's Wacky Doodle Dinner

Well, the sun has finally arrived!  After 2+ days of constant rain...Mr. Sunshine has finally made an appearance -- although it did become a bit steamy when the sun popped out after all that rain.  This evening I decided to make (heat) the Aidells Chicken Teriyaki Pineapple Meatballs for dinner.  I didn't really know what to serve with them so I had hubby pick up a container of sauteed broccoli w/ peanuts from our local Chinese restaurant (I absolutely love the sauce they stir-fry the broccoli with) as well as a container of brown rice.  No your eyes did not deceive you -- you got it right -- we had balls, broccoli and brown rice for dinner...I think that qualifies as wacky, don't you?  I heated the meatballs in a covered non-stick skillet with a little water for about 8 minutes.  I know it sounds like a really weird dinner...and it kind of was...but it was really delicious!  The flavor of the sauce in the broccoli along with the flavor in the meatballs just complemented each other well.  Even hubby liked it.  I could tell he didn't seem really excited when I told him what we were having for dinner....but he scarfed it up and even got seconds on broccoli!  ;-)  I took a pic of our wacky meal below for you to see.  Enjoy!

It's Monday and it's Boar's Head Panini Night!

Today was another nasty rainy day out, but we needed the rain so no complaints here.  Hubby said he'd like something simple and quick for dinner tonight...so I made it "panini night".  I had some Boar's Head Honey Maple Turkey in the deli drawer and some sliced Muenster cheese...so I put a little smear of Boar's Head honey mustard on some Italian bread that I sliced and in about 10 minutes we were eating paninis!  These were really good too.  I know it is just a sandwich, but somehow grilling it in the panini pan just makes it "special".   I snapped a pic for you to see.  Enjoy!

Sunday is Pizza Night...& Fresh Raspberry Sundaes for Dessert

For dinner this evening, I made a pizza with Publix fresh pizza dough.  Hubby had pepperoni, Kalamata olives and artichoke hearts on his half and I had red peppers, Vidalia onions and turkey pepperoni on my half.  Both of us were in the mood for pizza tonight so it was a quick and easy meal to put together and the best part is that we get to have it for lunch tomorrow too!  For dessert, I decided to use the gorgeous raspberries I picked up this weekend to make Fresh Raspberry Sundaes.  Since the fruit was so absolutely perfect, I decided to tumble the fresh raspberries on top of a scoop of Kemp's lowfat vanilla frozen yogurt...nothing else required!  Check out the pictures below!  Enjoy!

For a little perspective, I scooped up one of the raspberries in a teaspoon so you could see just how large these raspberries are -- I've never seen any this large before.
They aren't just beautiful, they are really sweet and delicious too.

Sunday's Ramblings...

Well, it is a cool and rainy Sunday.  It's only 70 degrees and very dark and dreary out.  We slept in a bit late this morning since it was so dark.  Today I have been trying to figure out how to post pics to my blog since I received a warning that I had exceeded my picture storage capacity of 1GB -- who knew???  I think I may have it figured out...finally!

Last night I made us a quick dinner of Grilled Chicken & Mozzarella Ravioli that I tossed in a simple mixture of fresh Cherub cherry tomatoes, Campari tomatoes, yellow tomatoes and orange tomatoes that I sauteed lightly in some olive oil  I tossed it all together, sprinkled with fresh basil, cracked black pepper and some shredded Parmesan cheese.  It was a simple, quick dinner that took about 15 minutes to prepare.  Below is a picture that I was unable to post yesterday...but so far, so good today.  Enjoy!

Saturday's Food Finds...

Well, it is a bright, sunny and breezy day here...low-mid 80s.  Hubby and I did our Costco run last night after work so we could run our local errands this morning.  We bought another tomato plant today and we are getting ready to plant it here in a few minutes.  Until we start getting a bumper crop of tomatoes, I picked up another flat of some beautiful Campari tomatoes last night at Costco as well as some awesome looking fresh Prima Pasta raviolis.  I found their Heirloom Tomato Basil & Mozzarella and one I have been looking forward to trying...it is their "Superfood" variety w/ Spinach & Kale as well as some gourmet cheeses.  Both look and sound yummy.  I also found a flat of some of the most beautiful and large raspberries I've ever seen.  I also picked up some Aidells Terriyaki and Pineapple chicken meatballs (that is what I ate for dinner last night -- 6 meatballs and blueberries w/ yogurt -- how weird of a dinner is that?).   Check out some pics below.  Enjoy!

Thursday's Rainbow Salad Bowl

This evening I decided to make us big salads for dinner.  I picked up Sunset's "Gourmet Medley" of tomatoes at the grocery store...it had a gorgeous collection of orange tomatoes, yellow tomatoes, jumbo round red cherry tomatoes, and oblong red Cherub tomatoes.  I sliced up all of the different kinds of tomatoes and tossed them into a big bowl of lettuce and tossed in some chunks of chicken tenders and some red pepper crisps and a little Italian dressing and BOOM...dinner was on the table.  Check out the picture of this beautiful "Rainbow Salad Bowl" below.  Enjoy!

Wednesday Night Paninis...

This evening I didn't feel like making a big meal after waiting for over 2 hours in the doctor's office this afternoon...ugh!  I wanted to make something that was quick and simple.  I decided it would be the perfect panini night....so hubby stopped at the store and picked up an unsliced "French loaf" and some deli meat and I grilled us up a couple paninis in no time.  He had turkey, salami and swiss with a light smear of honey mustard and I had a turkey, white cheddar-jalapeno, tomato and basil (both the tomato and basil were from our garden).  They turned out perfect and delicious and took less than 15 minutes to make both of them.  You must admit that mine was much prettier!  ;-)  Check out a couple pics below.  Enjoy!

Quick and Easy Chicken Parmesan

This evening I made a quick and easy Chicken Parmesan using leftover breaded chicken cutlets from last night's dinner.  I love making a completely "new meal" using leftovers.  I put a thin layer of Bertollli's Marinara Sauce w/ Burgundy in the bottom of a small casserole dish, placed the cutlets on top of the sauce, sprinkled with a little mozzarella, provolone and parmesan...then covered the casserole and popped it in the oven for about 20 minutes at 350 degrees.  I stuck the leftover herb-cheese bread in the oven to reheat along with the Chicken Parmesan.  I cooked some whole wheat penne pasta while everything heated in the oven and tossed it with marinara sauce.  I then topped the penne with the Chicken Parmesan cutlets and sprinkled with fresh Italian parsley.  It took less than 30 minutes to put a delicious meal on the table....that is my kind of weeknight dinner!  Check out the picture below.  Enjoy!

Herbalicious Monday...

It's Monday...one down and four to go!  For dinner this evening, I made Perdue chicken cutlets that I breaded in whole wheat Italian seasoned bread crumbs that I added some Parmesan cheese and fresh chopped rosemary to.  I first dipped the cutlets in some eggbeaters that I seasoned with sea salt and black pepper and then dredged them in the bread crumb mixture.  I sauteed them in a hot pan with some olive oil -- they cook quickly since they are so thin, probably only about 4 minutes per side.  I served the cutlets with Near East Rosemary & Olive Oil Quinoa Blend (quinoa and brown rice) and fresh zucchini that I sliced and sauteed in a little olive oil with fresh dill and a diced fresh tomato from our backyard tossed in.  I also made some herb-cheese bread with a ball of Publix pizza dough.  I rolled the dough with some sharp cheddar, jalapeno white cheddar, swiss, mozzarella and fresh chopped chives and fresh chopped dill.  Now you know why I titled this post "Herbalicious Monday" because every component of our meal was laden with herbs...most of them fresh.  It was not only herbalicious but it was delicious too!  I snapped a picture to share below.  Enjoy!

Sunday's Pizza Night...

This evening we had homemade pizza for dinner.  I had a few turkey pepperoni, Cherubs cherry tomatoes and Vidalia onions on my half and hubby had turkey pepperoni, Kalamata olives and artichoke hearts on his half.  It was a quick and easy dinner to put together with the help of Publix fresh pizza dough.  I snapped a few pics to share below.  Enjoy!
