Sriracha & White Cheddar Eggs w/ White Cheddar-Black Pepper Biscuits
This morning we awoke to a beautiful cool morning. I decided to start off our last weekend of summer with a "bang" by making Scrambled Sriracha & White Cheddar Eggs served alongside White Cheddar-Black Pepper Biscuits and crispy strips of bacon. There was lots of delicious flavor on our plates this morning. I actually tried these eggs out earlier in the week when my son stopped by unexpectedly for lunch. He loves Sriracha and I needed to make something quick and easy since I was home for a quick lunch and had to head back to work. They were SO delicious that I couldn't wait to make them again so hubby could try them. I grated my favorite Cabot's Sharp White Vermont Cheddar (a generous pile) and then scrambled 6 organic eggs and cooked them in a little Kerrygold butter. As the eggs began to cook, I added the grated cheese and a generous squirt of sriracha (2 to 3 teaspoons or so). I continued stirring and cooking the eggs and then served them alongside crispy bacon and my White Cheddar-Black Pepper Biscuits (made with Cabot's Sharp Vermont White Cheddar). It was a quick and easy breakfast to help usher out this ridiculously hot summer we had this year. I snapped a few photos below. Enjoy!
I plan on making these biscuits tomorrow. I am sure they will be delicious. I love the Cabot sharp cheddar cheeses. It is finally getting cool here also. I am anxious for the fall weather! I could never survive the humidity in the south. It is bad enough here in southeastern Pa. Going down to 49 degrees tonight!! I made your eggplant lasagna recipe for dinner today. It was delicious. My husband liked it also. He is going to have a piece for breakfast tomorrow morning. There is enough left over that we can have it for dinner another night during the week. We made a tomato sauce with ground beef and mushrooms. I usually make the tomato sauce (being Italian) but this time my husband asked if he could make it. He did a good job. I am also going to make your cranberry pistachio biscotti. We bought a dehydrator so I am going to dry cranberries as soon as I see them in the store. I had some in the freezer from last year but I used them up in other recipes. Take care and keep cooking.

ReplyDeleteThanks so much! So happy you enjoyed it. Wow...I can't WAIT for temps to drop in the 40s at night!!! Yes, the humidity is quite uncomfortable. It is actually pretty humid here today and this evening (it's 11:00 pm now).
LOL on your husband wanting to have the Eggplant Lasagna for breakfast! He must REALLY like it. I hope you enjoy the biscotti. I really like it. Great idea on dehydrating the cranberries. Let me know how that turns out!
