With the cauliflower -- when you cook it, once it is tender and done...turn the heat up to high or medium-high and remove the lid of the pan and stir it around until there is no moisture left at all on the bottom of the pan -- almost dry but not yet scorching the cauliflower. See if that might help -- that is what I usually do because all of the chicken stock isn't gone, but is mostly gone by the time the cauliflower is. So glad you enjoy it!
