I used the 1/4 cup almond meal & 1/4 cup flaxseed meal instead of all flaxmeal,and they were both excellent! Yes, it would feed 2 people -- it is...Hi sunshine2! Yes, it would feed 2 people -- it is about the size of a whole "sub sandwich". If you are making it the first time, I would suggest adding the sauce when you eat it (instead of inside it so it will be easier to roll).
