Healthy Chocolate Almond Coconut Milkshakes

Well, it is officially "hump day"...Wednesday is down and two more days to go!  This evening we had leftover pizza for dinner...but I was in the mood for a milkshake...and wanted it to be healthy with low or no sugar.  While we were on vacation last week, I found a new flavor of Blue Diamond Almond Milk...I found "Almond Coconut Milk" and it came in an unsweetened version too.  I love regular almond milk...but this one was just over the top for me!  :-)  It has only 45 calories for 8 ounces, 50% more calcium than regular milk as well as being both soy, sugar and lactose free.  I decided to make a Healthy Chocolate Almond Coconut Milkshake with it using Ghiradelli unsweetened cocoa powder and Truvia to sweeten it.

I put a rounded tablespoon of cocoa powder, a rounded teaspoon of Truvia, and a dash of cinnamon in a small bowl and added a couple tablespoons of water and microwaved until warm to make it easier to combine the cocoa powder into the cold almond coconut milk (it is really hard getting dry cocoa powder to dissolve into cold liquid).  After the water/cocoa/Truvia mixture is warmed for about 45 seconds are so, I stir it well to make a paste like consistency and gradually add a few tablespoons of the milk in to thin it.  After it is well blended and smooth, I pour that slurry into a tall glass and then pour about 12 ounces of the chilled almond coconut milk into the glass and mix together well.  You should taste it to see if you have enough sweetener.  I don't like it real sweet, so you might need to add more sweetener to suit your own taste.  Because the almond coconut milk is thicker than regular milk, it tastes very rich and creamy...almost sinful and it only has about 85 calories.  These are milkshakes guaranteed to bring all the boys to the yard! ;-)  How can you beat that?  I snapped a pic for you to see below.  Enjoy!

"Boom!"

  5. Hi Mary -- the only protein powder I have bought or used is Jay Robb's (I have both their whey protein and their egg white protein). It is sweetened with stevia. LOL about the yogurt! :-)

  7. Hi Mary -- I hope you find it in Florida while you are there. Wow...I can't believe you get to work there almost every day (Costco) -- you get to see EVERYTHING when it comes in! I have been a member for a very very VERY long time! We finally got the executive membership since we shop there so often -- and get a nice rebate each year. Have a wonderful vacation at Disney and keeping my fingers cross you can find some Swerve while you are down there and save on shipping it! :-)
