Chipotle Dusted Grilled NY Strip Steaks & Tri-Color Veggie Ribbons

This evening, I stopped to pick up a couple of steaks on my way home from work to toss on the grill for dinner.  It actually got pretty hot here today...in the upper 80s.  Dinner was so easy to put together.  I patted my NY strip steaks with paper towels until dry, then lightly coated them with olive oil and dusted both sides with some ground Chipotle Chile pepper, Celtic sea salt and freshly ground black pepper.  I grilled them on a hot grill for about 4 minutes on each side and then placed them on a plate and covered them with foil while I prepared the super simple and beautiful Tri-Color Veggie Ribbons.  Using a regular vegetable peeler, I made thin ribbon strips with 2 carrots, 3 small yellow squash and 3 small zucchini and then quickly sauteed them in a little butter and extra virgin olive oil. I put the carrots in the pan first and sauteed for a minute or two since they are a harder vegetable...then added the zucchini and yellow squash strips and sauteed another 3 minutes or so and then seasoned lightly with salt and pepper.  I also sauteed some sliced fresh mushrooms in a little butter and seasoned them with a splash of sherry, salt and pepper.  I sliced the rest of my mini San Marzano tomatoes and tossed them in a tiny bit of extra virgin olive oil and a little fresh basil and seasoned with a dash of salt and pepper.  It was a simple, fresh meal made from fresh whole foods...there was nothing processed whatsoever on my plate!  I snapped a few photos below for you to see.  Enjoy!

    We had the steak for our 4th of July dinner. V-E-R-Y tasty!

    Our weather wasn't great for the holiday, but not too bad, other than a bit humid. It could have been much worse. I'd rather have rain than what we usually get this time of year ... unbearable heat and humidity. Sun is out today, but it's quite pleasant. Hope your rain ends soon. It will probably end Monday, right on schedule, when everyone has to go back to work!

  2. Hi CyberSis! Glad you liked the steak -- pretty simple, but adds a different flavor. Today it alternates between bright sunny weather and then abrupt storms and downpours -- a little while ago it was sunny on the front of my house and pouring down rain in the back! It's THAT kind of weird! Depending on which window you look out, it looks like a nice day or a stormy day...LOL. I think they said we could get up to 3 more inches by Sunday -- just like you said, the weather will probably be gorgeous beginning on Monday when we go back to work! :-)
