Simple Roast Chicken Rustica...My Style

This evening I had planned to roast some chicken thighs and baby eggplants for dinner, but unfortunately, my eggplants were no longer fresh and I had to pitch them. So...a quick re-grouping was in order!  I decided to make a simple rustic style roasted chicken dish that I just threw together. I had 5 boneless and skinless chicken thighs (about 1-1/2 pounds total), 5 small zucchini, 3 large cloves of minced garlic, half of a sliced medium onion, a couple large handfuls of grape tomatoes, white wine (chardonnay), sea salt, freshly ground black pepper, red pepper flakes and herbes de Provence. I seasoned the chicken thighs with sea salt and black pepper and then lightly browned them in some olive oil over medium-high heat until golden and then transferred them to a plate.  In the same pot, I tossed in the sliced onions along with the zucchini (sliced into 1/2" thick slices) and cooked them while stirring frequently until lightly cooked. I then added in the minced garlic and cooked for another minute, sprinkled in a generous pinch of red pepper flakes and then added about 1/2 cup of white wine to deglaze and loosen the browned bits accumulating on the bottom of the pan.  I dumped the entire veggie and wine mixture into a large rectangular casserole dish and spread the veggies out into an even layer and sprinkled with a pinch of herbes de Provence.  I placed the chicken thighs on top of the zucchini mixture and surrounded the thighs with beautiful plump grape tomatoes and another generous pince of herbes de Provence and sea salt.  I popped it into a 400 degree F oven for 35 minutes and roasted until the chicken was browned and the tomatoes were roasted and had begun popping open.  After removing from the oven, I sprinkled it with some shredded Parmigiano Reggiano and chopped fresh Italian parsley.  It was rustic, fresh and simple and full of fresh flavors.  I snapped a few photos for you to see below.  The best part of this recipe is there is no exact measuring required...a little of this and a little of that -- it's my favorite kind of recipe to make!  Enjoy!

    So I was looking at your recipe list and I was wondering if I will ever be able to try them all? I am not a spring chicken any more. My question to you is:" if I only had a few more month to live, which dishes are you most proud of and that you would like me to try?" I hope that it is not unfair to ask such question! The chicken pot pie and the Greek Spinach Pie is already on our list, so are your pie crusts and chocolate cookies!
    I am a handful, right?

  5. Hi Barbara! Yes, storage is definitely a problem -- especially for "collectors" like us, right! LOL Wow...to answer your other question -- first, I surely hope you don't just have a few months to live -- I am thinking you are meaning that figuratively as in "what recipes you should try"!!! Otherwise...I would say eat WHATEVER you like and don't worry about wheat, sugar, or anything!!! But, I will tell you that if you wanted to narrow it down to what I think is worth putting close to the top of your list...it would be: 1) Chicken Scampi-ish over Parmesan Cauliflower Mash (it is really good together); 2) I really like the Chicken Paprikash I recently made; 3)Lasagna - either made with eggplant or zucchini; 4) Shepherd's Pie (topped with mashed cauliflower instead of potatoes); 5) Moussaka (a few different versions); 6) Pizza made w/ almond/flax/parmesan herb crust; 7) Chili-Spicy & Sweet (using roasted butternut squash added to the bowl instead of beans). Of course, I like my Yellow Squash Casserole a lot too, especially with a more plain grilled or roasted meat or fish. Off the top of my head, that is what I think of...but you might not like some of the same things I do (like eggplant, for example). So...since there are so many recipes to choose from, and, of course, I will keep creating more...it looks like you will have to live for a LOOOOONG time to get to try all of them! ;-)

  6. Hi GG, I really felt guilty about my request, I have no clue how you manage work, house work , cooking , taking photos, answering your blogs and coming up with new recipes, shopping etc. How do you do it? My hat off to you !
    But again I thank you very much.
    I will now go down the list.
    My husband went to the mountains for a couple of weeks, he requested the Greek spinach Pie and the Chicken pot pie to take along. The Greek Spinach Pie is the most practical dish to have around. Both my husband and I enjoy it cold. I always use a whole pound of spinach just as you do! I cut it into portions and freeze it, so that we are never without it. You might say we have an addiction to it! LOL. I have never bought so much spinach in my life.

  7. I just found you while browsing through old posts on Wheat Belly Blog - and I'm so glad I did! I'm 2 weeks into a totally wheat/gluten free way of eating and I love to cook, so I'm learning to adapt recipes. While I'm here, do you have something good to replace bread crumbs on top of a casserole? I'm thinking of using plain parmesan cheese but something with a bit of crunch would be nice - thanks!

  8. Hi Bronwyn! Yes, Parmesan cheese would be good -- you could also use toasted slivered almonds as well. Depending on what your casserole is, you could cut some butter, almond flour and cheese (Parmesan or Cheddar) together to be crumbly, similar to an apple crisp type of topping. The almonds would give it crunch and you could add those along with the Parmesan or other cheese. I hope you find some ideas or if nothing else, inspiration here! I have lost 62 lbs eating this way and love it! :-)

  9. Hi Barbara! Please don't feel guilty about your request -- it's a logical one! Honestly, I do believe the Greek Spinach Pie is probably one of, if not "the" favorite of mine. I have even eaten as a late breakfast before. I really enjoy it. I have never tried it cold though -- I will have to do that. I love it with a full pound of spinach, but figure some might find it "too spinachy". I think it makes a healthy meal though. I have made other main dish similar pies that were good -- but none as good as that one! We are having beautiful weather here today -- my allergies are bothering me a little, especially my eyes after walking in the breezy weather last night. Take care and have a wonderful weekend! :-)

  10. Hi GG, Allergies are a very *pesty* condition, so irritating ! I hope that it will pass soon!
    We are having the worst windy conditions here, sucks the moisture right out of everything. The garden needs constantly watering and I much rather cook something from the list of *must cook recipes*. I wish we could buy some time, there is never enough of it! While I was amazed what you all accomplish in one day I forgot to list your 1 hour daily walk.
    Truly now you must write a recipe how to accomplish all that! Do you get your 8 hours sleep? I never do!

  11. Thanks, Gourmet Girl - I love the almond flour/cheese/butter idea and will try it on my next casserole (bacon cauliflower gratin). I'll let you know how it turns out!

  13. Hi Barbara! I only WISH I could get 8 hours of sleep. Unfortunately I usually get about 6 hours -- 7 on rare occasion -- there just aren't enough hours in the day! Occasionally on a weekend I might sleep a little longer and I feel so good when I do. Getting more sleep is on my "to do" list -- I just need to figure out how to do that! Have a great weekend! :-)
