Happy Father's Day -- Surf & Turf Dinner (Filet Mignon & Chipotle Lime Shrimp Kabobs)

First of all...Happy Father's Day to all the fathers out there!  For our dinner this evening, I made a mixed grill for dinner.  We had grilled filet mignon and grilled chipotle lime shrimp kabobs (marinated in lime juice, lime zest, olive oil, sea salt and ground chipotle powder).  I also made grilled marinated boneless chicken breasts for youngest son since he isn't wild about beef.  I also sauteed fresh sliced mushrooms in Kerrygold Garlic & Herb Butter and made French green beans with toasted slivered almonds and salad.  I made baked potatoes for the guys to have, too.  I snapped a couple photos of dinner for you to see below.  Enjoy!

    P>S. I cleaned out my kitchen drawer where I kept the print outs from you wonderful recipes .Now I can not find them, I obviously put them somewhere very safe. I am going crazy, they should be with y million cookbooks but the are not!

  2. Hi Barbara! Thanks! Actually my father passed away years ago...but he would have loved it! He always thought everything I did was amazing (even when it wasn't). He was probably my biggest fan and I miss him a lot. I wished you lived closer and I would have invited you! I'm sure you will find your print outs one day when you are not looking for them! I am the same way -- as soon as I clean out a drawer, or my purse...then I can't find anything!!! At least you can find them online if you need to since they are always there! We have had more rain both last night and today, too...pretty soon everyone here will have "waterfront property" if it doesn't stop...LOL. Hope you are doing well! Oh, you might like this -- for my dessert tonight, I made "nutella flavored Greek Yogurt"...LOL. I mixed hazelnut extract and chocolate extract into it with stevia -- it was good! I like the hazelnut flavor too -- next time I made this flavor of yogurt I will add more hazelnut! :-)

    I have a large 3-ring binder that holds all my GGC printouts ... pretty soon I'll be starting a second one! :-)

  4. Hi GG, No matter how old I am getting I still miss my father terribly, he was very special and got us through very hard years.
    You are younger than I, so you lost your Dad much too soon, but then, is it not always too soon?
    So wonderful that he was a fan of yours, that is invaluable.
    I wish I could take some of your rain, we did not get enough. I sincerely hope that you do not get flooded! I watched the weather channel and it looked not good for your area.
    I also use my extracts every day, should have bought the larger size of chocolate. as you know I add a little whipped cream to my yogurt, since we are allowed to have fat. That really puts it over the top.
    The reason I needed my print outs is that I am travelling to my daughter who has two children , boy and girl.The boy has terrible *acid reflux* and I am trying to have her change the diet. It is not easy to do when one has a full time job( she does). wish me luck!

  5. Hi Barbara! I hope a change in diet helps your grandson -- wouldn't it be great if something as simple as a change in diet helped him and he didn't need any medications? This evening I added peanut butter, chocolate extract, some cocoa powder (for extra chocolate), half-and-half and stevia to my Greek yogurt...it was awesome! I hope you enjoy the time with your daughter and grandchildren! :-)

    Well, that settles it ... I'm going to use the 20%-off coupon that came with my Olive Nation order for the chocolate extract. Well, I may as well get the hazelnut, too, as long as I'm at it! :-)

  8. GG you are funny too, *extract junkie* I really think we are. I am writing my *concoctions* down .
    I sure go through a lot of peanut butter, which I make myself! Still have not had time to blanch my hazelnuts to make filbert butter.
    I went to Costco to get the wild Salmon, unfortunately the packages were so large, that the cheapest salmon was $41.25.So I c
    ame home without the fish!

  9. Hi Barbara! Wow...that is a LARGE piece of salmon at that price. Most of mine are in the mid-upper ($25-$30) range -- I don't think I would buy one that large either. I wonder why they cut them that big? That is almost another pound larger than the big ones I buy. I just had the last leftover piece on top of another salad for my lunch and enjoyed it. Hubby is getting tired of all the salmon and halibut -- he likes it but doesn't "love" it. So...I guess it will be either chicken or spinach-feta pie tonight...depending on my mood! If I keep making spinach-feta pie...he will get tired of that too! LOL I love having the leftovers of that for lunch -- it is so quick and easy and filling all at the same time. Right now the sun is shining brightly...and I hope we get a little break from any rain today! Take care and have a good day! :-)
