Quick & Easy Cranberry Walnut Parfait

Happy Sunday! This morning, as I was making breakfast, I made a triple batch of my fresh Cranberry Orange Sauce w/ Coconut (the coconut is optional). I absolutely love it and find all kinds of things to use it with and for. When I got back home after grocery shopping this afternoon I was a little hungry. I usually don't eat lunch on the weekends but late this afternoon I made myself a quick and easy little Cranberry Walnut Parfait using an individual sized cup of Fage 2% Greek Yogurt, a couple tablespoons of my fresh cranberry sauce and a few chopped walnuts. It was amazing! I have found yet another way to enjoy cranberry sauce. It's such a shame to limit cranberry sauce to a little dollop on your plate at holiday time. I like it beside almost any kind of meat at dinner time or a little dollop alongside eggs for breakfast or as jam on a power bagel with butter or peanut butter. There are so many ways to enjoy cranberry sauce that it deserves more recognition than it gets. Check out my little yogurt parfait swirled with fresh cranberry sauce and walnuts. It tastes more like a dessert than a healthy cup of yogurt with fruit. Enjoy!

  1. yummmm!!! i made 2 of my favorite things yesterday…your frozen vanilla yogurt and the cranberry orange coconut sauce. i had 4oz of yogurt left over…NOW i know what to do w/it!!! LOVE the cranberry sauce…can't think of anything it won't compliment. had it yesterday w/almond butter on bagel, and today w/cream cheese on bagel. it IS really, really good. thanks for another winner : )

  2. Thanks so much Samudra. So glad you like the cranberry sauce. I am going to make sure to stock up on freezing fresh cranberries this season so I don't run out by Christmas time! They get hard to find around here after Thanksgiving it seems. Glad you are enjoying it. :-)

    Now, if I can just find that Fage 2% yogurt, I'll be set - I really tend to only find fat free or skim yogurts, which frustrates me. I'm checking a second Costco...

  4. Thanks, Tanita! I actually find the 2% Fage at my local grocery stores (Publix, Kroger, Ingles, Whole Foods and Sprouts). I believe Trader Joe's has it too. My Costco only carries 0% unfortunately.

    I hope you can find it. Another good Greek yogurt is one made by Greek Gods.

    Honestly...I will find any excuse to add cranberries! When you see me making cranberry soup one day...you will know I've gone over the edge a bit! ;-)
