Chicken Pot Pie w/ Cheddar Herb Crust - Low Carb

Today was a busy day which is why I'm just getting around to posting at almost midnight Sunday night! Both sons came for dinner this evening and since we've had such an ugly rainy week and weekend, I decided that some comfort food was what we all needed tonight. I can't think of anything more comforting on a chilly damp Sunday night than my Chicken Pot Pie w/ Cheddar Herb Crust. It was exactly what we needed. It was filled with big chunks of chicken, carrots, and broccoli encased in a nice rich sauce and covered with a delicious golden cheddar herb crust. I packed mine so full that it bubbled over even more than usual this time; fortunately I kind of figured that would happen and placed a large cookie sheet underneath to catch it as it began bubbling over towards the end of baking.     I made this the other day. It was absolutely delicious. There was enough for another meal and then some. I wanted to tell you that I made your powerhouse bagels. I dried fresh cranberries in my Excalibur dehydrator. I cut them in half to speed up the drying process it took 6 hours. I also made your biscotti recipe. I use the basic recipe and then add different extracts and nuts. The cranberry pistachio ones will be getting made now. In my opinion you have the BEST recipes.

    P.S. I made a grilled cheese sandwich this morning for breakfast with your sandwich bread which contains the golden flax. I used applegate yogurt cheese. DELICIOUS

    Wow...sounds like you've been quite busy cooking and baking! Such a great idea dehydrating your own cranberries! I've considered on and off getting a dehydrator but the ones I look at seem to take up quite a bit of space which I am quickly running out of! Do you use it often? If I thought I would use it frequently, I might just have to make space for it! LOL

    Glad you are enjoying the basic biscotti recipe. The cranberry pistachio version are one of my favorites.

    Too funny about making grilled cheese with my flax sandwich bread. I have actually been thinking about doing that the last few days...ever since my brother made grilled cheese and bacon sandwiches with regular bread. I am so happy you are enjoying my recipes and thanks so much for the kind comments. It means a lot. :-)
