I had one of my Strawberry Chocolate Chip No-Flip Pancakes left from last weekend that I reheated. I made Scrambled Pepper-Jack Eggs (made with Cabot Pepper-Jack Cheese) and Applegate's Chicken Maple Sausage Patties (nitrite/nitrate free and 1 carb each) to go with it. Sometimes I like to use Nature's Hollow Pancake Syrup on my pancakes but this morning I decided to make a simple warm "Butter Berry Sauce" instead. I sliced up 3 strawberries and rinsed a few tablespoons of fresh blueberries and then sauteed them in about 1 tablespoon of Kerrygold butter until tender (about 2 minutes). I simply poured it over the top of my pancake wedge and "Voila"...I had warm, naturally sweetened buttery berry sauce! It was awesome. I've also used cranberry sauce heated with butter before which is also delicious. I snapped a couple photos of my delicious low carb breakfast/brunch below. Enjoy!

Low Carb Saturday Brunch - Pepper-Jack Eggs, No-Flip Pancakes & Sausage
This morning we slept in late. I am still battling whatever virus I've had for the last few weeks, so it was especially nice to get the extra sleep. Last night I actually had yogurt mixed with cranberry sauce for dinner because I just didn't have an appetite. But, this morning I was ready to eat something a bit more substantial so I made myself a big late brunch to last me until dinner time.

Your dinner last night sounds good too! I LOVE SF cranberry sauce (I just love cranberries, and love that berries are a good LC choice for us).
Your warm berry sauce from this morning would be awesome used in a LC shortcake delectable too, or just in a bowl, maybe even with a dollop of whipped cream that gets all melty!!! Great idea!!

Sorry to hear that you're still doing battle with that awful virus. It's certainly not going away easy, is it! When you're finally done with it maybe you'll have lifetime immunity ... at least to *that* virus! I used to work for a doctor in another state that has a couple of ways to get rid of viruses fast. Unfortunately, those therapies aren't widely available.
I'll have to try the cranberry/butter sauce. Sounds wonderful! It just so happens that I just got a big bag of blueberries from Costco, so I may throw a few of those in, too.

Yes, this virus has hung on. Started off like a regular head cold and then after a week turned ugly...upper respiratory, deep cough and unbelievable congestion. Never had a temp over 100 though and no body aches and pains (in other words, not flu). Hubby brought it home to me, but others at work have had it and it has lasted over a month in some folks! Ugh.
I really like the simplicity of making a simple berry and butter sauce. My berries were sweet enough, but if not, a little sweetener would solve that. I am saving my energy to go to Costco tomorrow...felt too tired to go today. Thanks for the well wishes! :-)

Re: Alice's comments about shortcake, above, it just so happened that I made your Southern style biscuits this evening. I decided to split one, spread on some cranberry sauce, and top with a nice blob of thick, creamy, mild full-fat Stoneyfield yogurt. Heavenly! :-) I could go for the bowl of whipped cream, too! ;-)

Lots of folks here (West Texas) have had the crud hang on and on, like yours has, GGC. Guess that is what this year's version leaves in its wake. Hope you are on the downhill side of it now. So sorry you've had such a hard time with it.
Funny on the cranberry sauce, I've still been eating on what was left over from the holidays. It still smells fine, tastes fine, but I AM starting to wonder if it isn't time to just make a new batch?!! There's not over a half cup left, and I think it is less than that, but I hate to throw food away, unless it needs to be!

Thanks. Yes, this has been a tough bug/virus this year. I woke up feeling lousy this morning and I didn't even finish my cranberry yogurt breakfast. I did make it to Costco though early in the afternoon.
Yes, it's probably time to make a new batch of cranberry sauce. I've wondered how it would freeze. Maybe I should freeze a small portion for a week or 2 and then thaw it to see how it comes back after the thaw. I wonder if it will get watery, etc. I'll try and remember to test freeze some. It would be awesome if we could freeze it to pull out whenever.
