Creamy Chicken Enchilada Soup - Luscious Low Carb

This weekend, I've been a bit off the grid since I haven't been feeling well. I've got some sort of upper respiratory/sinus thing coupled with an eye infection. I felt so bad yesterday that I just had yogurt for dinner last night. This evening, I decided I needed to have something a bit more substantial and comforting to eat since the meds they put me on make my stomach feel yucky. 

Whatever I made was going to have to be easy. I decided hubby would assist me in making one of my easy soup recipes for dinner. He helped me prepare my creamy Chicken Enchilada Soup. He ran to the store and picked up a rotisserie chicken, some salsa, sour cream and green onions that I needed. He shredded the sharp white cheddar cheese for me so the only work I needed to do was to mix things together and heat them. It's a quick and easy soup to make and the flavors and light creamy texture provided the comfort that I needed. I topped the bowls of soup with shredded sharp white cheddar (Cabot), salsa, green onions and a little pickled jalapeno. Your noting of this recipe came at a great time! I made some chicken veggie soup this afternoon and wanted to make a portion of it creamy. Your method of doing so worked great!!

I've made LC cheese sauces before in the microwave with melting cream cheese and working in cheese and cream to ultimately wind up with a sauce. This was so easy working straight in the pan. I always thought the cheddar would glop up that way. Guess the hwc going in first prevents that!

Thanks so much. I am happy you were able to use part of my recipe to make your chicken soup creamy. I use that method when making the sauce for my Chicken Enchilada Casserole. Even though it seems looser when its super hot, it's amazing how creamy it gets as it cools slightly. Thanks for the kind words, too. I'm home today resting which is hard for me to do. :-)

So sorry to hear that you're under the weather! :-( Your hubby's willingness to help out is the *most* comforting, isn't it. I bet this soup is just what you need, too. It's beautiful and, if you're like me, it's just spicy enough to appeal to a tummy that has been put through the ringer by medicine! Keep comfy and cozy and *try* to rest up. And feel better soon! :-)

PS: Sure hope you're missing most that super snowstorm that's pounding the East coast!
