Grilled Steak & Salad - Easy Low Carb

Happy belated Easter! We've been extremely busy this past week getting ready for my brother to move down here this weekend. We are excited to finally have family with us here in Georgia. It was a very busy weekend...so busy that we are actually delaying our Easter dinner until next weekend so we can actually celebrate and enjoy it without being exhausted.

It was a beautiful sunny day here today and absolutely perfect weather for grilling. My brother was in charge of grilling the steaks (over hickory chips) and he cooked sliced sweet onions with Worcestershire sauce in the Lodge skillet over the fire as well which turned out great. I sauteed sliced mushrooms in Kerrygold's Garlic & Herb Butter and made salads. It was a great way to kickoff his first home cooked meal since his arrival yesterday. To tell you just how busy I've been...today was my first trip to Costco in over 3 weeks (when I usually go every single week)! Now, once we all recover from our aches, pains and strains from this weekend's move...I'll hope to be back to posting more regularly again. Check out our delicious and easy meal below. How wonderful to have your brother close by! I know how you feel. I miss my brother a lot and it's just so special whenever he's able to visit.

The meal looks great! I guess your brother inherited the "cooking genes," too. :-) We haven't started grilling yet ... it's still been too cold! Easter was beautiful and sunny but later that night we got thunder, lightening, and tons of rain! One storm after another all night. Warming up a wee bit this week but cold again by the weekend! Well, it *is* still March, after all! Funny, March came in like a lion AND it looks like it's going out like a lion, too. Such a deal! :-)

Hi GG, how fun and exciting that you will have family nearby! You will be able to play tour guide, too!

I wish we could finally grill-it has been windy and/or cold most every day here in Southern Colorado. Hopefully April will be much calmer.

Thanks! It is nice to have a "grill master" handy now! Just like you are lucky to have a "frittata king". The temps have been pleasant here but the pollen is awful. Thursday we are supposed to get 3 inches of rain, thunder, etc. It's so hard to believe that April is at the end of the week already! It has been busy but we are excited to have him here! :-)

Lucky you in Southern Colorado! On of my coworkers daughter goes to Colorado State and it sounds like they got quite a snowstorm last week. Did you get any of that snow? I bet you will be grilling before too long. :-)
