Simple Greek Raspberry Parfait -- A Perfect Breakfast for the 1st day of June

Happy Sunday and Happy 1st Day of June! This morning we got up early to get started on our day. I made a simple Greek raspberry parfait for my breakfast using a 7-ounce cup of Fage 2% Greek yogurt blended with about 1 tablespoon of heavy cream. I sweetened it with a bit of stevia and stirred in a few mashed ripe fresh raspberries to infuse the yogurt with fresh raspberry flavor and add a pretty light pink color. I topped it with some additional fresh raspberries and a little bit of whipped cream. It wasn't fancy or complicated but was a nice way to start this first day of June. 

I also snapped a photo of hubby's breakfast. He had a fried "farm fresh" egg, sausage (Aidells Chicken & Apple) and one of my Cheddar Black Pepper Biscuits that I made Thursday evening when we had "breakfast for dinner" since one of the folks from his work brought him a couple dozen farm fresh eggs from her chickens. She brought him a dozen "Cinnamon Queen" eggs and a dozen "Rhode Island Reds" so we had eggs, sausage and biscuits for dinner that night. I had actually snapped a couple photos of Thursday night's meal to post...but silly me didn't realize that the photos I snapped that evening were while using my camera WITHOUT a memory card...so guess what happened when I went to download the pics to my computer that night? They did not exist! LOL How in the world I didn't notice the flashing warning on the screen saying "no card"...I'll never know. Check out mine and hubby's breakfast below. Enjoy!

Thanks so much Linda! That is exactly why I do this! I'll be honest, when I first looked at the list of foods that are allowed on a wheat and grain free plan (and all those that are not allowed)...my heart sank a bit. I figured that I would have to trade variety, taste and good food for good health. When I actually began making the foods to eat this way, I realized that it was definitely not boring...and what better way to show folks than to SHOW them rather than tell them. So...I began my almost daily posts of the foods I eat and the recipes I create. It's said that a picture is worth a thousand words...that is especially true when on paper it looks like there are so many things you won't be able to enjoy again...I hope my photos help show otherwise!
