Oven Roasted Citrus-Butter Wild Copper River Salmon - Easy, Sustainable, Low Carb

This evening I made my favorite Wild Copper River Salmon for dinner. I picked it up at Costco, who had it for $14.99/lb this past weekend (it was $16.99/lb the weekend prior). I kept it simple and seasoned it with sea salt and pepper and put softened butter on top and then alternated fresh orange and lemon slices. I popped it into a preheated 450 degree oven and then immediately reduced the oven temp to 425 degrees and roasted it for 10-12 minutes (depending on thickness), then removed it from the oven and covered it with heavy duty foil and let it sit about 5 minutes. It turned out delicious. I served it with steamed cauli-rice (raw cauliflower grated with a box grater then briefly steamed in the microwave) tossed with butter and diced multi-colored baby tomatoes. It was a healthy, quick and delicious meal. I snapped a few photos below. How heavenly! Unfortunately for us, Copper River Salmon has been quite elusive this year. Costco hasn't had it ... we just checked again today. Last week we received a mailing from Sam's Club announcing that they had it. We went the same day to get some only to be disappointed. It seems that these ads are "generic" in that they don't necessarily apply to the store in your particular area.

Can't be long now before the season is over. Today we ended up buying some nice looking Alaska sockeye from Costco, anyway. It will be lovely tomorrow, but as we both know, as good as it is, it's kind of a "consolation prize" during Copper River season. :-)

Too bad you haven't found Copper River Salmon this year. I've found it several times thus far. And yes, Alaska sockeye is better than "farmed" any day of the year so while it isn't Copper River...it's a pretty decent consolation prize. :-) Sorry I've been more scarce recently...things are crazy here. We are moving and in the process of all that entails. Hopefully things will settle down soon. :-)
