This evening I decided to make "Breakfast for Dinner". I made nitrite free Applewood smoked bacon that I baked until crisp, fried some cage free organic eggs and served it with the leftover Ancho Chile Cheddar Biscuits from earlier in the week as well as some leftover Squash Gruyere Bake from last night's dinner. It was quick, simple and delicious! It was extremely overcast all day today and began lightly raining as I snapped the pictures of our "breakfast/dinner". While the bacon was cooking, I snapped a few pictures of the roses that seem to have exploded in our backyard. For some reason, they almost appear fluorescent against the dark gray gloomy day.
