Grilled Filet Mignon w/ Mushrooms, Red Peppers & Onions

This afternoon hubby and I worked on trying to bring some order to our house. While we didn't finish, by any means, we at least made a noticeable dent! If we don't get a handle on it before the holidays...well, I will just need to move and start over again...LOL. We cleaned and worked until late in the afternoon and then ran out and did a bit of grocery shopping. Only one son came for dinner tonight (the one that likes beef)...so I decided with the beautiful weather AND the son that likes beef eating with us, that it would be a great evening to grill steaks. We had simple grilled filet mignon with fresh mushrooms sauteed in Kerrygold butter, steamed broccoli, sauteed red peppers and onions and both of the guys had baked potatoes with their meal. It was simple, fresh and delicious!  I snapped a quick photo for you to see below. Enjoy!

Filets are on our menu tonite too! Love love love 'em. Wish it was grass fed but can't afford that right now! Just a quick question...do you not eat white potatoes at all? because they are a starchy vegetable? i also love steamed red potatoes. Just curious. I love potatoes so much ......especially breakfast ones with peppers, onions, etc. I use red skinned (skin on) or regular. I always try to be organic potatoes because one time I watched a show about the awful pesticides they spray on nonorganic ones. :) Have a super evening and thanks again for the posts. I don't always get to comment but I do love your blog!

I could eat that 3 times a week! I love filet mignon, and the vegetables are all my favorites. Beautiful!

Hi Patricia -- thanks, I love filet mignon too! I do love potatoes but do not eat them because of the starch -- for me, it's best not to eat them except for rarely because of my triglycerides. I am trying to keep them down and avoid as much starch as possible. But...I love them and like you said, breakfast potatoes with onions, peppers, etc. -- yummy! Thanks for the kind comments as always! :-)
