Easy Grilled Lamb Shoulder Chops w/ Roasted Baby Brussels Sprouts

This evening I prepared the lamb shoulder chops I purchased from Sprouts this weekend. They're a different cut than the loin lamb chops I usually buy. They actually were very flavorful. I had intended to marinate them during the day but forgot to so when I got home I whisked together a quick little marinade to add some flavor and tenderize them a bit. I marinated my chops for about 45 minutes until hubby got home to grill them. They took 10 minutes or less to grill.

To go with our lamb chops, I trimmed the bag of fresh baby brussels sprouts I picked up at Sprouts (LOL on sprouts from Sprouts). Since they were so small and cute, I kept them whole rather than halving them. I steamed them for about 4 minutes in a couple tablespoons of water in the microwave on high and then spread them on a baking sheet and tossed them with some olive oil and seasoned them with a bit of sea salt (the Pink Himalayan sea salt also bought at Sprouts). I roasted them for about 10 minutes at 400 degrees and then stirred in a few heaping tablespoons of oven roasted tomatoes packed in oil (that I find at Costco) and continued roasting the sprouts along with the tomatoes for another 5 to 10 minutes. The tomatoes added a nice deep flavor to the sprouts and it was a perfect side dish to go with our grilled lamb chops. Grilled Lamb Shoulder Chops

Ingredients:

2 pounds lamb shoulder chops
Juice of 1 lemon
1/4 cup olive oil
1/4 - 1/2 teaspoon sea salt
Freshly ground black pepper, to taste
1/2 teaspoon dried rosemary, crumbled between fingertips
1/8 teaspoon dried thyme
1/8 teaspoon dried oregano

Directions:

Place lamb chops in a Ziploc-type bag. In a small bowl, whisk remaining ingredients together; pour over chops. Seal air out of bag and marinate 30 minutes to 1 hour, turning after 15 to 20 minutes to marinate all sides.

Grill approximately 4 minutes over medium-high heat per side for medium doneness, or until desired doneness. Transfer chops to platter and cover with foil and allow to set for 5 to 10 minutes.

Hi GGC,

Well ... great minds DO think alike! :-) We had grilled lamb chops tonight, too. Ours were from Costco, and I think these were the best we've ever had, and that's saying a lot because they are always excellent! Yours' from Sprouts look wonderful! I doubt if Sprouts will be arriving in our neck of the woods any time soon.

Now that I have the tomatoes, I want to start using them. I have just a few more of our fresh "Julia" tomatoes left (I cooked some into a tomato sauce tonight) and then after that it'll be full steam ahead with the Costco ones. I'll definitely make your Brussels sprouts side dish. Looks "delish"! :-)

Isn't that funny? While the flavor of the chops I made was excellent...I'd be lying if I didn't admit that I prefer Costco's lamb chops. Don't think I've ever had any better than theirs. I need to pick some more up soon.

Lucky you still having fresh tomatoes to use up! I made a Greek meatloaf this evening - it's in the oven now and I even added some of those roasted tomatoes to it, too. Anxious to see how it turns out. :-)
