Spicy Beef Sliders on White Cheddar-Black Pepper Biscuits - Low Carb & Gluten Free

This evening I made sliders for dinner. I used a little over 1 pound of ground beef to make 6 mini burger patties. I kept it simple and seasoned them with sriracha, ketchup and mustard. Rather than place cheese on our sliders, instead I made a batch of my Cheddar Black Pepper Biscuits, but instead of using the usual yellow cheddar cheese, I used Cabot's Vermont White Cheddar that I freshly grated from a large brick. I tossed in some extra cheese and went a little heavy on the black pepper. They made great little biscuit buns for the sliders and the sharp cheese flavor and bite of black pepper went great together. To go alongside our "Biscuit Sliders", I oven roasted a medley of baby tomatoes (multi-colored grape and cherry tomatoes) that I seasoned with salt and pepper and drizzled with olive oil and roasted at 400 degrees for about 25 minutes. At the end, I sprinkled them with finely grated Parmesan cheese and popped then under the broiler for a couple of minutes. They were delicious. Easy Spicy Beef Sliders


1 pound lean ground beef
1 tablespoon sriracha, or to taste
1 tablespoon ketchup
1 tablespoon yellow mustard


Mix all ingredients together in a medium bowl. Divide into 6 equal portions and form into 6 small patties. Make a small indentation in the center by pressing your thumb down in the middle (this helps keep the patties flat when they cook so they don't get a dome top). Grill approximately 5 minutes per side, or to desired doneness. If desired, serve on Cheddar Black Pepper Biscuits.

LOL...no, they are not toys...they are SLIDERS! And I did not cook them in the little 3.5" Lodge Skillet you sent me...we grilled them. :-)
