Saturday's Quick & Easy Grilled Chicken

Today started off on the chilly side, but quickly warmed up into the 60s.  It was bright and sunny and an all around gorgeous day...a beautiful day to grill out.  Before we headed out to run our errands, I placed some boneless chicken breasts in a Ziploc bag and pounded them with my meat mallet to make them even in thickness.  I poured some "Zesty Italian" dressing over them and sealed the bag.  It is a quick and easy marinade if you don't feel like making one from scratch.  Sometimes I add fresh herbs or dried rosemary too.  I put the chicken in the fridge to marinate all day while we ran our errands.  I had plenty of leftover cheddar mashed potatoes from the other night and decided to use them up with our grilled chicken tonight.  One of hubby's favorite vegetables is baby lima beans, so that is what I served him with his meal.  Below is a couple of pics.  Tonight we have to "spring forward" with our clocks which I do not like.  Hope you had a great Saturday too!
