Sunday's Pan Sauteed Fillet of Sole w/ Garlic Herb Butter

It rained most of the day here today and we had brutal thunderstorms overnight.  Parts of our metro area got 7 inches of rain today and we are currently under flood watches. This evening I made a quick and simple meal for dinner.  Youngest son came for dinner and his two favorite things to eat are chicken and fish...so I decided to make fish for dinner since we had chicken last night.  I picked up some beautiful wild caught fillet of sole for dinner.  I very lightly dusted both sides with blanched almond flour and a little sea salt and sauteed it in Kerrygold's Garlic & Herb Butter.  If you haven't tried it before, it is a very heavily herbed stick of their butter and is perfect for sauteing a delicate fish like sole in.  I heated a large nonstick skillet on medium high heat and added a couple tablespoons of the garlic herb butter and sauteed the super thin sole fillets for about 1 to 2 minutes per side and then squeezed on a little fresh lemon juice.  In a separate medium skillet, I melted another tablespoon of the garlic herb butter and sauteed fresh sliced mushrooms and served the sole topped with the seasoned mushrooms.  I steamed some fresh broccoli to go with our meal as well as heated up leftover Golden Cheddar Biscuits I made Thursday evening.  It was a quick, simple and delicious meal.  I snapped a couple photos for you to see below. I picked up some Kerrygold garlic & herb butter just the other day and wondered how I might use it. Pan Sauteed Fillet of Sole and sauteed mushrooms ... perfect!

Hi CyberSis! I hope you enjoy that flavored butter -- it is good just melted on cooked veggies too. Yes, that's a lot of rain, isn't it??? So far, so good. It's sunny today but more rain on the way for tomorrow -- no deficit of rain here this spring! :-)

Hi GG, could you please send some rain to California? It is hard for me to go month after month without it. I so miss the fragrance in the air after a rain fall. Our skies are mostly cloudless during the summer, quite boring as I am a lover of them. But I should not complain, other wise it is quite wonderful to live here. The best climate from all the countries I lived in actually, since I am so heat-intolerant. That is getting worse with age! But what is not?

A propos cellar- that can be a curse too, one tends to fill it up over the years. Our house is in need of retro-fitting(earthquakes) and I have the difficult task of getting rid of" my beloved stuff".

Hi GG, just wanted to tell you that I made the "herb" butter in my food processor. I *googeled* the ingredients and voila prepared it in 5 minutes!
I do the same with cream cheese, just garlic, parsley and black pepper. Tastes like *Alouette*.

Hi Barbara! What a great idea -- whipping up both the herbed butter and cream cheese in the food processor. Why it is that sometimes it is the simplest things we overlook sometimes? I bet it is delicious and would be a great way to use up extra fresh herbs before they go bad! You could season it so many different ways, too! If I could send rain your way, I would...but I do envy your climate. I loved the climate in San Diego and San Francisco. It has been over 10 years since I visited California -- I remember we went in July and it was so cold in San Francisco that we had to buy sweatshirts and jackets!!! July here is sweltering hot and muggy -- we were quite surprised by how beautiful the temperature was there in the summer. It is also a very beautiful state. I understand completely about not wanting to get rid of our beloved belongings -- it is hard. I know that my kids probably won't even be interested in most of my belongings when I'm gone...but they hold lots of sentimental value for me, so I keep them. Thanks for the great idea about making your own herb butter and cream cheese...that would be fun to top different grilled meats or fresh veggies with! Take care. :-)

Hi GG, yes it can be cold and foggy in San Francisco, but when you leave the city and drive just 10 miles you will find a totally different climate, I always feel sorry for the shivering tourists.
