Grilled Steak w/ Buttered Mushrooms & Haricots Verts -- Real Simple, Real Food

It was a beautiful bright and sunny day here today -- it actually felt like spring was in the air. We slept in a little later and then ran our errands this morning, including our weekly Costco run. Since it was such a gorgeous day here, we decided to pick up something to grill for dinner. They had really beautiful filet mignon at Costco as well as haricots verts. I had originally planned to make my Baked Cauli-roni & Cheese to go with our meal, but decided to keep it simple and kept it to just grilled steak and lightly steamed haricots verts (steamed by cooking for 4 minutes in a covered glass casserole without any water in the microwave). I tossed the steamed beans in Kerrygold's Garlic & Herb Butter and sauteed some fresh sliced mushrooms in butter to top my steak (hubby doesn't eat mushrooms). I kept our steaks really simple, too. I lightly brushed both sides with olive oil and then seasoned each side with coarse Kosher salt and freshly cracked black pepper. I served our steaks topped with a pat of Kerrygold's Garlic & Herb butter to add additional flavor. To cook our steak, we heated our gas grill on high and then seared the steaks for 3 to 4 minutes on one side, turned them a quarter turn and cooked an additional 3 minutes...then flipped them over and repeated on the other side. We  then move them away from the flame to complete cooking by indirect heat to desired doneness. Hubby prefers his medium-rare and I prefer mine medium-well (about another 5 minutes of cooking, depending on the thickness -- our steaks were about 1-1/2 inches thick). We transferred the steaks to a plate and covered them for about 5 to 10 minutes to complete cooking. It was so nice being able to grill dinner this evening and it was a delicious, yet simple meal. Nothing but real whole foods...no fuss, no muss. I snapped a few photos below. Enjoy!
