Strawberries & Cream Pecan Greek Yogurt -- Simple But Special
Happy Sunday! This morning I made a quick and simple breakfast. I wasn't in the mood for eggs and I didn't want my regular weekday plain Greek yogurt with cinnamon and stevia. So, I decided to make a special yogurt parfait of sorts. I scooped a 7-ounce container of Fage 2% plain Greek yogurt into a bowl and added a bit of stevia, 3 diced ripe strawberries, a few broken up pecans, a splash of heavy cream and a couple teaspoons of golden flax meal to make a more substantial yogurt breakfast. I loved it! I used to add golden flax to my yogurt years ago but don't do it much any more. I tend to keep it very simple during the week since I take it to work to eat, so I really enjoyed my "special yogurt" this morning. I had it along with a cup of coffee out on the back patio since it was already in the low 60s and bright and sunny out. We are supposed to get up to 71 degrees today! Sometimes we forget that meals doesn't have to be complicated or time consuming to be special (I have to keep reminding myself of that). I really enjoyed this simple breakfast.
