Spicy Beef & Cabbage Soup - Slow Cooker Style

This evening we had one of my favorite easy soups for dinner, Spicy Beef & Cabbage Soup. Why is it easy? For one, it's prepared in the crock pot / slow cooker...and on a Friday night, after a long week...I can't tell you how nice it was to come home to a hot meal waiting for me! Secondly, it has very few ingredients and despite that, is unbelievably good. I actually put my soup on to begin cooking late last night before going to bed and cooked it all night long and all day today until I got home from work. The cabbage and beef were so tender and the flavors melded together so nicely in the slightly spicy, flavorful beefy tomato broth. I snapped a few photos for you to see below. So glad you like this soup, too. I love soups with cabbage in them. I was thinking about chili just the other day. Our cool front is supposed to move in mid-week with temps in the evenings in the 50s...I can hardly wait. It was pleasant and upper 70s here today but tomorrow is supposed to be back up in the 80s again. I am so ready for Autumn! :-)

Hi GGC,

I made this yesterday ... a "souper" way to usher in Fall. :-) I cheated a little bit, though ... I used bagged coleslaw instead of cutting up a cabbage. Worked great! This time I simmered it on the stove for a couple of hours instead of using the CrockPot. Also worked great. Looking forward to the left-overs!

Lovely fall weather again today. temps are expected to rise steadily for us, too, and by the end of the week it's supposed to be around 80. Still a little summer to get through yet, but the calendar says it's autumn, so we must be getting close!

PS: I made thin & crispy crackers out of your chia pizza crust recipe. Really nice accompaniment for the soup!

Great idea using the bagged coleslaw. I actually almost did that this past time, but didn't have a bag in the fridge or I would have That would even make it more quick to throw together, too. In the cool weather, I actually love having a pot of soup simmering on the stove...that way I get to open the pot and stir-n-sniff...where you have to keep the lid on the crock pot! LOL

Great idea making crackers out of the pizza crust too. Did you season them any differently or keep them "as is?"

Sounds like you really did find a great, or "souper" way to usher in Fall! Glad you are enjoying it! I'm having leftover soup for dinner tonight! :-)

Hi GGC,

The only change I made with the crackers was to sprinkle some sesame seeds on top before baking. Also rolled the dough really thin and the crackers turned out nice and crispy.
