Monday Night's Asian Inspired Chicken Burgers

Today was an absolutely gorgeous day here at the cabin.  It was sunny all day long and only 67 degrees when we woke up at 7:30 a.m. this morning.  For dinner, we grilled burgers (beef) and corn on the cob, chips and veggies (broccoli florets and baby carrots) and dip for hubby and daughter's dinner.  For my dinner, I made myself some delicious "Asian Inspired Chicken Burgers" using ground chicken breast and served it on a bed of fresh sauteed sliced mushrooms, steamed broccoli and cherry tomatoes marinated in olive oil and pomegranate vinegar.  It was an absolutely delicious meal and everyone was happy!  I snapped a few pics of my meal below (it was the prettiest one) as well as the simple recipe I put together for my Asian Chicken Burgers.  Enjoy!

Asian Inspired Chicken Burgers

INGREDIENTS:

1 lb. Perdue Ground Chicken Breast
1-1/2 tablespoons low sodium Tamari sauce
1 or 2 green onions, sliced thinly
3 tablespoons carrots, grated
Freshly ground black pepper
Pinch of cayenne pepper

DIRECTIONS:

Mix all ingredients thoroughly in a medium bowl; form into 3 or 4 patties.  Brown in a non-stick skillet lightly coated with olive oil; cooking until golden and done in the center (no pink remaining) or if you prefer, you can grill them.  If you decide to grill these burgers, be careful because they are very moist and lean and may fall apart.  They kept together very well cooking them on the stove.

"Mountain Morning" Tri-Color Omelets

This morning we awoke to a beautiful sunny 67 degree "mountain morning"...the birds are singing, you can hear the river running out back...I think this is what "peaceful" sounds like!  I made us tri-color pepper omelets for breakfast as well as some turkey sausage links for my daughter.  Our omelets were loaded with yellow, orange and red bell peppers along with Vidalia onions that I sauteed in a little olive oil.  I sprinkled some shredded cheddar and Italian cheese in them before folding over.  Take a look at our "mountain breakfast" below.  Enjoy!

Lime & Herb Marinated Grilled Chicken and Zucchini Patties (gluten free)

Well, we are officially on vacation...and are staying at one of the most beautiful riverfront cabins...it's quiet, it's secluded and it's relaxing.  It is one of the most unusual cabins and looks like something you would find in a magazine.  We arrived yesterday and had all the unpacking and grocery shopping to do, so I didn't get a chance to cook until today.  This evening I made Lime & Herb Marinated Grilled Chicken, Zucchini Patties (gluten free), Cherry Tomatoes that I marinated in Pomegranate Vinegar & Olive Oil (along with salt and pepper) and added baked potatoes to the plate for hubby and my daughter (who is spending a few days with us).  It was a delicious dinner.  I snapped a few photos of my meal below as well as the recipe for the Lime & Herb Marinade and the Zucchini Patties -- I tossed in a few photos of the cabin too.  Enjoy!

Zucchini Patties (Gluten Free)

Ingredients
2 cups of zucchini, grated
1 cup of Italian blend cheese, shredded
1/2 cup Parmesan cheese, grated
2 eggs, beaten
1/4 cup, plus 2 Tablespoons almond flour
2 Tablespoons coconut flour
1/3 cup sliced green onions
1/2 teaspoon baking powder
1/2 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
Dash of cayenne pepper (optional)
Olive oil and/or butter (enough to coat non-stick skillet)

Directions
Squeeze all excess liquid from grated zucchini (line a clean dish towel with several layers of paper towels; roll and squeeze until excess liquid is removed. 
In a medium bowl, add the zucchini, cheeses, green onions, baking powder, almond and coconut flours, eggs, salt and pepper; mix well.

In a large non-stick skillet, heat a few tablespoons of olive oil, and 1 tablespoon butter (as needed) until hot.  Drop heaping tablespoons of the zucchini mixture into the skillet and cook on both sides until golden brown.  Remove to plate lined with a paper towel to absorb any excess oil or butter.  Serve immediately or keep warm in a 325 degree oven up to 30 minutes.

Lime & Herb Marinated Chicken

Ingredients:
Juice of 3 or 4 limes
1/4 cup olive oil
1/2 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Turkish oregano (or regular)
1/2 teaspoon Greek seasoning
1/4 teaspoon cayenne pepper
3 or 4 boneless chicken breasts

Directions:
In a small bowl, combine all marinade ingredients well.  Pour marinade into a 1 gallon Ziploc bag.  Add chicken breasts and seal bag tightly (squeezing out as much air as possible).  Marinate approximately 4 to 8 hours.  Grill until done.

Almond-Parmesan "Breaded" Chicken Cutlets, Mashed Cauliflower & Roasted Brussel Sprouts

This evening I was in the mood for Italian Breaded Chicken Cutlets, mashed potatoes and roasted brussel sprouts...but since I am eliminating wheat and reducing carbs, I had to make a few modifications.  I must say, my modified version of this meal was as tasty, if not more so, than the "regular" version.  It also was a fantastic way to eat lots of fresh veggies.  Our meal included fresh cauliflower, fresh brussel sprouts and fresh tomatoes and was absolutely delicious.

To coat my boneless chicken cutlets, I mixed about 1 cup of almond flour/meal in a bowl and added about 1/4 cup of grated Parmesan cheese, a few shakes of sea salt, freshly ground black pepper, Italian seasoning, garlic powder and cayenne pepper.  I combined it thoroughly.  In a small bowl, I made my egg wash.  I added some egg whites (Egg Beaters), black pepper, cayenne pepper and sea salt and beat well.  I dipped my chicken cutlets into the egg wash and then coated well with the "almond breading" mixture and sauteed in a hot non stick skillet coated with olive oil until golden brown on both sides.

While my chicken cutlets were cooking I cut up and cooked a large fresh head of cauliflower that I cut into florets and boiled/steamed in about 1 inch of lightly salted water for about 15-20 minutes until tender.  When tender, I drained the water and put the pot of cooked cauliflower back on the stove over medium heat to further dry it out a bit, stirring occasionally.  I then mashed it was a potato masher and added 1 tablespoon of a butter/olive oil blend, 2 tablespoons of reduced fat cream cheese, 1 tablespoon of sour cream, a few tablespoons of Parmesan cheese, sea salt, black pepper and a dash of garlic powder.  This seasoned it and made it a bit creamier in texture, but not heavy.  While the cauliflower and chicken were cooking, I halved some fresh brussel sprouts, drizzled with a little olive oil, sea salt and pepper and popped them into a 400 degree oven for about 20 minutes to roast.  Since our tomatoes and basil are really coming in now, I diced several of them and tossed with a little olive oil, red wine vinegar, salt, pepper and fresh basil from our garden to make a fresh little side tomato salad to accompany our meal.  The dinner was absolutely delicious.  I snapped a few photos below.  Enjoy!

Wacky Wednesday's Omelet

This afternoon we had yet another massive thunderstorm and downpour.  It started raining more than an hour before I left work and it just finished raining not too long ago (it is 8:00 pm) and it looks like the sun is trying to peek its head out again!  My poor tomato plants that are in pots are beginning to show signs of over watering (yellowing leaves)...but they are full of tomatoes.  During one of the brief lulls in the rain, I snapped a few pics of the cherry tomatoes from inside the house.  We have had rain almost daily for well over a week now...but that's a good thing (if you're not a potted tomato plant).

This evening I made omelets for dinner.  They are quick and easy and I have peppers in the fridge that I need to use up.  I sauteed red bell peppers and Vidalia onions to put inside the omelets along with some fresh salsa and a little shredded cheddar cheese.  I enjoyed a cup of Macadamia Nut Cookie coffee with my omelet.  It was a quick and easy dinner that only took about 20 minutes total to make.  I snapped a few pics of the omelet below.  Enjoy!

Pizza with a Secret Ingredient in the Crust!

Sunday evening I decided to try making a pizza crust without using any wheat.  Not only did it not have wheat in it, but it had a secret ingredient that might surprise and/or shock you.  Beginning last week I began eliminating wheat from my diet (mine only, not for hubby or the family).  I am doing a little experiment to see if it might help me with some autoimmune issues I have been experiencing.  This will make preparing my meals a little more creative, but I don't think it will be hard since I cook almost every day anyway.  We do not eat out a lot, so other than reading labels more carefully (wheat is in almost everything, just like sugar is), I am going to give it a whirl.  For instance, Saturday night, hubby had a side dish of ravioli in alfredo sauce with his chicken and salad...I just had the chicken and salad, no ravioli.  Enough of that now...I snapped a few pics of our pizza below.  I read numerous "wheat free pizza crust" recipes and then tweaked this one a bit.  This recipe made a huge pizza that fit in a 12x17 jelly roll pan / cookie sheet.  I will unveil the mystery pizza crust ingredient at the end....first I want you to see the photos of the pizza as well as the recipe below.  Enjoy!

Okay...brace yourself for the unveiling of the secret ingredient...you aren't going to believe it...it's actually hard for me to believe!!!  
Here goes....<hear the drumroll?>

Cauliflower!!!

Cauliflower Pizza Crust

Ingredients:
1 large head of cauliflower, cut into florets (yields about 3 cups cooked and mashed)
1/4 cup olive oil
1/2  cup Egg Beaters or 2 large eggs
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese
1/4 cup almond flour/meal
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 – 3/4  teaspoon red pepper flakes (optional)

2 cups shredded mozzarella or Italian cheese blend (8 oz)
12 oz jar of pizza sauce (about 1-1/2 cups)
Toppings of your choice

Directions:
Cook cauliflower florets in about 1 inch of water until almost tender (about 10 minutes). Drain water and continue cooking cauliflower in dry pan over heat while mashing with a potato masher.  Let mashed cauliflower cook about 5 minutes in open pot to allow more liquid to evaporate.  Lay out a tea towel or dish towel and line with several layers of paper towels and spoon the mashed cauliflower on top and allow to cool slightly. Add several more layers of paper towels on top so cauliflower is completed encased.  Roll towel up, and squeeze excess water out of the cauliflower; squeeze it as dry as you can.  Transfer to large bowl. Add 1/4 cup of oil, eggs, and 1 cup of mozzarella, ½ cup of parmesan cheese, 1/4  cup of almond flour and all of the spices. Mix well.

Preheat oven to 375.  Line pizza pan with parchment paper and coat with about 1 tablespoon olive oil. Pour the cauliflower mixture into the pan and press it out flat and thin (less than 1/2 inch thick, the thinner the better).  Bake for about 25 minutes.  If it has not browned yet, remove from oven and increase oven temperature to 425 degrees and lightly brush top of crust with about a tablespoon of olive oil and return to the 425 degree oven for about 5 minutes or until lightly golden brown.

Remove pizza crust from oven and spread with pizza sauce, remaining 2 cups of shredded cheese, your choice of toppings, etc.  Lightly sprinkle with additional parmesan, if desired.  Return to 425 degree oven and bake about 10-15 minutes until toppings are heated through and cheese is melted.  To brown the top, place under broiler for a few minutes (3-5 minutes) until bubbly and browned.  Let cool a few minutes.  Cut and serve. 

Note:  This pizza crust is not “crispy” like regular pizza crust…it is solid, but soft (fork & knife).  Next time I make it, I may make it into 2 small pizzas instead of 1 large.  Some people suggest flipping the crust over to allow it to bake and dry out more (my pizza was entirely too large to flip).  This pizza tasted like "regular pizza".  You could not taste the cauliflower in the crust...the only difference was the crust was soft or limp compared to regular crust.  Hubby rated it an "8 out of 10" (with 10 being the best) and said if the crust could be "crisper" it would be a 10.  I will continue working on modifications to see if that can be done.  It is tasty and it does satisfy your urge for pizza.

***Personal Note:  This pizza was very tasty but I do not believe the crust was typical "pizza crust like" in texture, so if that is what you are expecting, you might be disappointed.  However, in terms of flavor, it was delicious -- it doesn't taste like cauliflower in case you were wondering.  Hubby and I had the leftovers reheated for dinner this evening (Monday night) and I must honestly say...it tasted REAL good -- as in noticeably better than yesterday for some reason.  I wasn't able to reheat it in the oven (hubby overstuffed the storage drawer underneath my oven when he put the baking pan away last night and I can't get to any of my baking pans, cookie sheets, etc.)...so I decided to reheat it in on the stove in a large non-stick skillet brushed lightly with some olive oil to help the bottom of the crust brown when it reheated...and guess what???  It not only browned nicely, but it gave it a wonderful flavor.  This makes me think that next time I make this I need to find a way to brown the pizza crust nicely before topping it as well as make several smaller pizzas instead of one humongous one.  Yesterday I would have rated it a 7.5 (hubby rated it 8 yesterday)...today it was pretty darn close to a 10...a solid 9.5.  I will keep experimenting and tinkering around with it...but for the first time making this, not knowing what to expect...it was surprisingly good.

Quick & Cool Olé Salad for Lunch

This afternoon I decided to have a nice big salad for lunch using some of the leftover rotisserie chicken and salad from last night's dinner.  I filled a big bowl with romaine lettuce, halved Cherub cherry tomatoes, shredded carrots, diced rotisserie chicken breast and a little finely shredded cheddar cheese.  To keep the "dressing" Mexican themed I mixed together a couple of tablespoons of "Jack's Special" Garden Gourmet fresh salsa and a heaping tablespoon of reduced fat sour cream (it looked similar to Thousand Island dressing).  The only thing that might have made my salad a little better is if I had some fresh avocado to dice and toss in too.  Jack's Special salsa is really some of the best fresh store bought salsa I have found.  I picked it up a couple of weeks ago at Costco.  It tastes like you just made it fresh yourself!  I snapped a couple photos of my delicious and simple lunch below.  Enjoy!

Saturday Night's Quickie Dinner

Today we got up early and ran a bunch of errands.  We went to a number of different places and somehow ran out of time to spend much time putting dinner together.  I had all kinds of ideas for dinner, but it was almost 7:30 when we were headed home so we stopped and picked up a rotisserie chicken (which is the best "last minute" meal helper there is).  When we got home I made us a big fresh salad with romaine, tomatoes, cucumbers and carrots while I brought a pot of water to boil so I could make hubby some quick spinach-kale-cheese ravioli to go with his rotisserie chicken and salad (he didn't have much of a lunch).  I tossed his ravioli in some alfredo sauce and served that alongside his meal.  It was a quick, simple and delicious meal after running around all day in the humidity.  I snapped a pic of our quickie meal below.  Enjoy!

Friday's Frittata...

This evening we had yet ANOTHER round of bad thunderstorms and pounding rains.  We've had one every day this week.  The rain was awful on the way home from work but let up a bit as I got closer to home.  Since hubby wasn't going to be home until late from his conference, I decided to make myself something really quick and easy.  I made myself a delicious Italian turkey sausage, red pepper & Vidalia onion frittata topped with cheddar.  I sliced and sauteed the red bell pepper and onions in a splash of olive oil in a non-stick skillet and once they were tender, I diced up some leftover Italian turkey sausage and browned it a bit with the veggies.  I poured Egg Beaters over the veggies, covered the pan and cooked it until golden brown on the bottom and the eggs were set on the top and then sprinkled with some cheddar cheese.  It was simple, quick and delicious.  I enjoyed it with a cup of "Macadamia Nut Cookie" coffee.  Sometimes breakfast makes the best dinner and on this nasty stormy Friday night, it was just what I needed!  Check out a couple pics below.  Enjoy!

Wednesday Night's Awesome Leftover Lasagna...

This evening I didn't have to cook because we have lots of leftover Grilled Zucchini Lasagna from last night's dinner.  I even had it for lunch!  Since I didn't get a photo of an actual serving of my lasagna last night (we ate it as soon as I cut it), I snapped a photo of this evening's leftover lasagna for you to see how it looks on your plate.  This lasagna, by far, is one of my absolute favorite lasagnas ever.  Check out the photos below and see if you don't agree that it looks as delicious as I know it tastes.  Enjoy!
