Friday's Frittata...

This evening we had yet ANOTHER round of bad thunderstorms and pounding rains.  We've had one every day this week.  The rain was awful on the way home from work but let up a bit as I got closer to home.  Since hubby wasn't going to be home until late from his conference, I decided to make myself something really quick and easy.  I made myself a delicious Italian turkey sausage, red pepper & Vidalia onion frittata topped with cheddar.  I sliced and sauteed the red bell pepper and onions in a splash of olive oil in a non-stick skillet and once they were tender, I diced up some leftover Italian turkey sausage and browned it a bit with the veggies.  I poured Egg Beaters over the veggies, covered the pan and cooked it until golden brown on the bottom and the eggs were set on the top and then sprinkled with some cheddar cheese.  It was simple, quick and delicious.  I enjoyed it with a cup of "Macadamia Nut Cookie" coffee.  Sometimes breakfast makes the best dinner and on this nasty stormy Friday night, it was just what I needed!  Check out a couple pics below.  Enjoy!
