Wednesday's Simple Grilled Chicken Salad

This evening I made quick and easy Grilled Chicken Salads for dinner. Last night we grilled some more chicken breasts (spritzed with olive oil and seasoned with Montreal Spicy Steak Seasoning) because I wanted to have them available to make a salad with tonight. I kept the salads simple and just cut up some artisan romaine, red cabbage and cherry tomatoes (which I hope to have from my own little garden in a few weeks). I placed a grilled chicken breast on top...and Voila...dinner was on the table. I made a simple olive oil and red wine vinegar vinaigrette that I whisked together with some Greek Seasoning, salt and then stirred in some crumbled feta cheese...it was delicious. The first thing I did when I got home this evening was make another quick batch of my Sesame Seed Buns to have on hand. We had terrible thunderstorms move in this evening. I snapped a couple photos of my salad and a few of my veggie plants and buns before it began storming. The wind was awful so I hope my veggie plants will survive the wind and pounding rain...guess I'll find out tomorrow. Enjoy!
