Thursday's Greek Style Spinach-Feta Pie

This evening I was in the mood for my Greek Style Spinach-Feta Pie.  I created this recipe one evening a couple of months ago when I was in the mood for Spanikopita (a Greek spinach pie consisting of spinach, feta, herbs and spices layered between multiple thin, flaky layers of phyllo pastry sheets).  The buttery almond crust on this savory pie is the perfect grain free substitution to hold all the flavors of traditional Spanikopita suspended in a quiche-like dish.  The filling can be made with either whole eggs or egg substitute, depending on your personal preference.  It is rich, tasty and full of flavor and makes a perfect lunch or dinner.  You could even eat it for breakfast if you wanted to!  This recipe makes 6 to 8 servings, depending on how large you cut your pieces (for dinner, we cut it into 6 pieces).  Since it has been posted here before, I'm including a link to the post with the recipe as well as some additional photos for you to see.  Link:  Greek Style Spinach-Feta Pie Recipe    Enjoy!
