Tomato, Onion & Cheddar Omelet - Saturday Brunch

Happy Saturday! This morning we woke up early and went for our walk before it got too hot since we are supposed to approach 90 today. It's amazing how quickly it warmed up during those 45 minutes we were out. I decided to use up some of the ripe multi-colored baby tomatoes that I had on the counter by making a simple and delicious Tomato, Onion & Cheddar Omelet for our brunch and served it alongside sauteed sliced Aidell's Chicken Sausages (nitrite/nitrate free). I diced and sauteed a bit of Vidalia onion and sauteed it in olive oil until it was browned and caramelized while I quartered the little tomatoes. I tossed them into the onions and sauteed them for just a few minutes. I have enough cooked tomatoes and onions left for tomorrow's breakfast, too. This meal will easily carry us until dinner time.
