Quick & Easy Chicken Salad Cups - Low Carb Made Simple

It was extremely humid here this evening because big storms were moving into our area, so I decided to scrap the plan to grill something for dinner. Since I had leftover cooked chicken left from last night's dinner, I decided to make a batch of chicken salad and fill little artisan romaine lettuce leaves with it. I had sandwich buns that I could have used to make a sandwich with but I wanted something cool, crisp and refreshing this evening...and the little lettuce cups fit the bill perfectly. I chopped up the chicken and added mayo, diced red bell pepper, diced celery, sliced green onions and diced pickles with a few grinds of black pepper and pinch of sea salt. Sometimes something so easy is the best. I snapped a quick photo below. Enjoy!

I love chicken salad but don't like thinking about what the ready-made versions have in them. SO.....I am making this one today! Thank you for such refreshing menu options GG!

Thanks! Hope you enjoy it. I agree, I used to buy the chicken salad already made at Costco but when you look at the ingredients, you realize that you are definitely better off making it yourself so you know what's in it. Hope you enjoy it! :-)

UPDATER: I made a huge bowl of this recipe today....Just like you, very little mayo. SOOOO good, still gettin' raves from all and will have a sandwich tomorrow for lunch. This is my first time making chicken salad and it was so easy. Thank you for your recipes and the time you spend. I appreciate your blog so much.

Good job! Glad it turned out great for you. It is really pretty easy to do, especially if you already have leftover cooked chicken or turkey. I really enjoy it in these hot summer months...the coolness and freshness of a "regular green salad" but more substantial. Enjoy your sandwich tomorrow and thanks for the kind comments. :-)

Hi Ayla, this is my husbands favorite salad , except I add an apple and some pineapple chunks. My mothers old recipe. ( a lot of sweet-sour dishes from a region called *East Prussia*) ) I prepare the mayo with my favourite oil-Avocado.
