Baby Kale & Spinach Salads w/ Grilled Chicken

This evening was another quick and easy meal to put together -- even quicker than last night's meal.  I made big main dish salads using a baby kale and spinach mix that I picked up this weekend.  I topped them with red and yellow cherry tomatoes and diced grilled chicken breast leftover from last night.  I also put together a quick and easy salad dressing to top them with.  I mixed 1/2 cup of sour cream with 1/2 cup of salsa and added a few dashes of roasted ground cumin, cayenne pepper and a few grinds of black pepper and tasted it until it was the combination I liked.  It tastes similar to a Mexican "thousand island" type of dressing.  This is another one of those meals that I love making because it transforms leftovers into a completely different meal that took probably 10 minutes to put together.  I snapped a few photos below for you to see.  Enjoy!

I love the pictures of your dishes, you are a talented food photographer! I was wondering how you are going with the whole wheat-free lifestyle despite cooking such delicious meals. I have the Wheat Belly book and am keen to change to eating wheat-free, mainly for weight-loss I don't have any health problems (yet). Thanks

Thanks Sarah. Funny you should ask because I just weighed this morning before my shower -- I am down 34 lbs in 11 weeks -- and NO exercise (yet). With the cooler weather I plan to start -- waiting for the mosquitoes to slow down a bit; they are awful this year. It has been completely effortless to lose the weight for the first time ever. I eat very well but have no hunger/appetite issues without the wheat and grains...the easiest thing I have ever done!

Thanks Gourmet Girl. Everyone has very encouraging stories of their improved weight/health going wheat-free. My biggest challenge is having children still living at home but my husband is supportive. I'm going to try the low-carb pizza tonight while they are away camping, looking forward to it. By the way I live in Australia, hence the ridiculously early time that shows on my comment!

I understand your difficulty Sarah. My husband eats most of what I make, but I do occasionally make him something additional or slightly different (like tonight when I had my dinner on zucchini noodles, I made him regular noodles to eat his chicken paprikash on). One way I find easy when my grown kids eat with me is I make something like chicken, veggies and something else on the side for them. That way we are all eating mostly the same and they supplement with rice or potato or pasta, etc. Hope you enjoy the pizza -- if it is just for you, you might want to make less (1/2 or 1/3 of recipe). The original recipe makes a BIG pizza.

My kids are pretty good, they will eat the same as your husband so I just cook pasta etc for them to go with whatever else we are having. They are teenagers so are over the fussy eating. They know that's all there is if they are hungry! I'm going to use the recipe you posted for pizza for one and if I like the crust I'm going to make it when everyone gets back from camping. Thanks for replying!
