Roasted Salmon, Yellow Cheddar Squash Casserole & Buttered Broccoli w/ Bacon

This evening I made a quick and simple dinner...courtesy of...LEFTOVERS!  The meal was not made entirely of leftovers...but the leftovers from this weekend helped put dinner on the table super quick this evening (and super delicious, too). I roasted a couple of wild Coho salmon fillets that I simply brushed with a mixture of 1 tablespoon Kerrygold Garlic Herb Butter that I melted and mixed with some chopped fresh dill and a tablespoon of fresh lemon juice (and topped with lemon slices). I popped the salmon into a 450 degree F oven that I immediately reduced to 425 degrees and roasted for 12 minutes; removed and wrapped tightly with foil to sit for 10 minutes to gently complete the cooking. While the salmon rested, I steamed some fresh broccoli florets in the microwave for about 3 minutes and then tossed them with butter and 2 slices of chopped leftover bacon from yesterday's breakfast (and topped with a bit of shredded sharp cheddar). I also reheated the leftover Yellow Cheddar Squash Casserole that I made Sunday night when my boys came for dinner. I placed a leftover Easy Cheddar Black Pepper Biscuit on our plates (also left from yesterday's breakfast) and "voila", we had an awesome quick and easy meal that helped use up some of the leftovers from the weekend. Now, the hardest part of this evening will be deciding what "leftover" to have for dessert...my Lemon-Coconut-Blueberry Frozen Greek Yogurt Pops...OR...the Chocolate Hazelnut Cookie Bars (both made with Swerve) --"decisions...decisions"!  It is so easy to eat well without wheat or grains and with all the variety, it is never ever boring...I have been proving it to myself every single day for the last 420 days!  I snapped a couple photos for you to see below. Hi, just tried your cheddar biscuits with our dinner tonight, what a wonderful recipe. Very easy to put together and the taste is outstanding. We really enjoyed them. Looking forward to having one for breakfast with an egg. They are so light and the best part is not feeling like taking a nap right after eating it the way I would if I were eating a traditional biscuit made with flour!
