A Colorful Salad for a Dark & Dreary Day...

Today was an extremely ugly day here.  It was cloudy and gloomy all day long.  Our weather is supposed to be bad through Friday morning and many of tomorrow night's fireworks displays have already been postponed.  It will probably affect a lot of 4th of July cookouts tomorrow, too, I'm sure. I am uncertain as to what to fix for tomorrow's dinner because of the bad weather forecast...so it may be something completely non-traditional for what we typically have.  I usually make something grilled and had thought about making grilled lamb chops...but that might have to wait for another day.  Last night I got a head start  on pre-prepping some meals and grilled some boneless chicken breasts that I marinated in salsa, ground chipotle chile powder and lime juice...they turned out super tender.  I also decided to cook a whole chicken for a couple hours in a big pot on the stove to make chicken stock to make some home made soup.  I was so proud that I had done all of that ahead of time...only to suddenly wake up abruptly at 5:00 a.m. with the realization and gasp....oh NO...I forgot to put the chicken away (the whole chicken I cooked ahead of time for soup).  The pot was too hot and I wanted it to cool down a bit before putting it in the fridge...I should have used my timer like I usually do....and guess what...I fell asleep and well...that chicken idea is nothing but a memory now!!!  Oh well...at least I still had the grilled chicken breasts.  I used them to make us big, bright colorful salads for dinner...it was the only thing bright on this nasty ugly Wednesday.  I snapped a quick photo for you to see below.  Enjoy!
