Grilled Salmon Salad...Cool & Refreshing

This evening we are using up our leftovers from this week.  Hubby is having Farfalle (bowtie) pasta with Meat Sauce & Summer Veggies from the other night.  I am having the leftover grilled salmon from a couple nights ago.  I decided to eat it cold over a bed of lettuce, tomatoes from our garden and sliced avocado drizzled with olive oil and vinegar.  It was a refreshing meal after a long hot day.  It's nice when you get to "cook once" and then "eat twice", especially during these dog days of August.  It was in the low-mid 90s today and of all days, today I got locked out of the house at lunch time when I went out back to let the dog out and water the tomatoes.  Thankfully my neighbor was home and let me use her phone to call hubby to come home and let me back in the house (he does not work close by)...and also to let me call my office to let them know I would not be back from lunch on time!!!  It was probably about 94 degrees in the shade...and we waited close to an hour (both Spike and I) for hubby to arrive.  I was locked out of the house with no phone, no purse...and no shoes and with a little dog not used to the heat for that length of time (and no leash) in mid-90 temps...poor little Spike was panting away in the heat. We were so glad to see hubby pull into the driveway!  Unfortunately on his way back, rushing back to the office...he encountered the main highway near his work shut down -- ALL LANES due to a brush fire the fire department was battling.  He sat without moving for almost 1-1/2 hours. :-(  I already felt stupid enough for locking myself out -- have never done that before...but then I felt really bad that he had so much trouble just trying to get back to work.  So...having a cool salad for dinner tonight and not having to cook after a draining day was a good thing.  I snapped a quick pic of my salad below (you will notice that I even managed to break my salmon filet in half...it was just one of those days).  Excuse me now while I go collapse on the couch.  Enjoy!
