It's Wednesday and I'm Having Leftovers for Lunch!

This is my favorite part about having "leftovers" is the third and last day I have used the leftover grilled salmon from Sunday's dinner to make a delicious salad for lunch.  Some freshly torn romaine lettuce, some sliced cherry tomatoes, some shredded Parmesan cheese and a drizzle of Honey Dijon Vinaigrette and my little piece of leftover salmon makes yet another delicious lunch!  I shot a couple pics so you can see how beautiful it is.  Hubby doesn't know what he is missing with his aversion to leftovers!!!  :-)
