Sunday's Super Sockeye Salmon Salad...

This evening, dinner was so simple to put together.  I had some leftover cooked wild Copper River Sockeye Salmon from last night's dinner that I wanted to enjoy chilled, so I made a big salad and placed a big piece smack in the middle. It was quick, simple and delicious. Youngest son came over to have dinner, so I cooked him a new piece, and while he liked it, and ate it...he said he actually preferred farmed salmon, because it isn't as fatty...LOL. Go figure!!!  So, I guess from now on, I'll keep the expensive stuff for myself!  I snapped a quick picture of my salad below.  Leftovers never looked so good!  Enjoy!

"Super" is right! You should have no trouble keeping the good stuff for yourself now that your son has given permission. :-)
