It's Pizza Night!!!

This evening I was in the mood for pizza since I haven't had it for a while and pizza always seems to taste better on Friday nights for some reason!  I made my Almond-Flax-Parmesan Herb Pizza Crust -- it is one of my favorites. Instead of topping it with traditional pizza sauce, I used a little sun-dried tomato pesto made by Mezzetta, which is also one of my favorites (their green pesto is awesome, too).  After baking the crust, I spread a slightly heaping tablespoon of the sun-dried tomato pesto on top of the crust; added diced fresh mozzarella cheese, sauteed poblano peppers, Vidalia onions and sliced mushrooms and popped it back in the oven to bake and melt the cheese for about 7 minutes or so.  I removed it from the oven and turned the oven to broil and then topped it with sliced mini San-Marzano tomatoes and snipped green onion tops and a few shreds of Parmigiano Reggiano and then broiled it for a few minutes until hot and bubbly.  It was absolutely delicious!  I enjoyed my pizza with a fresh, crisp salad.  For dessert, I flavored some plain Greek yogurt with a little stevia, a few drops of black currant extract that I got yesterday and then stirred in some chopped walnuts...I was in heaven!  I snapped a few photos for you to see below.  Enjoy!

I made your pizza tonight also. I wanted to tell you that precooking the veggies made all the difference (last time my crust got soggy before we were finished eating.) Happy weekend!
