Chicken Salsa Con Queso Quesadillas

This evening I had some leftover rotisserie chicken that needed to be used up so I decided to make quesadillas...they are quick, simple and good.  I shredded the leftover chicken with 2 forks and placed it in a bowl; added a couple of heaping tablespoons of hubby's favorite "salsa con queso" cheese dip (made by Tostitos) and heated it in the microwave for a couple of minutes.  I spread the chicken mixture on one half of a whole wheat tortilla along with some diced tomatoes, folded it over and grilled it in the panini pan for a few minutes on each side.  I topped it with shredded lettuce, reduced fat sour cream, a little shredded cheddar cheese and more diced fresh tomatoes...and BOOM, we were eating Chicken Salsa Con Queso Quesadillas.  It made you want to scream...Ole̒ (well...maybe that's a little dramatic)... but it was good.  Check out a pic below.  Enjoy!
