Sunday's Chicken Enchilada Casserole

Well today is another scorcher.  We hit 104 degrees again today.  This is getting ridiculous!  We ran a few errands this morning and then headed back home quickly...it was just too miserable out.  This evening I decided to make my chicken enchilada casserole using the rotisserie chicken I bought yesterday (I picked up 2 of them).  It bakes at 350 degrees for 25 minutes and then you run it under the broiler to lightly brown the cheese on top for about 3 minutes.  It didn't heat the house up too much.  I served it with a fresh side salad and chips and salsa.  For dessert we are having "lemon chiffon" tartlets topped with blueberries that I also made on Friday (I made extra filling and we just fill the little tart shells as we eat them).  Youngest son and daughter came over for dinner tonight.  Oldest son and his girlfriend were out of town for the weekend.  I picked up some sugar cookies that were decorated for the 4th of July -- youngest son loves cookies and it just too hot to bake anything today!  I snapped a pic our our enchiladas below.  Enjoy!
