Tuesday's (without the Ruby) Pasta...

This evening youngest son came over to have dinner with me after work.  Hubby is out of town for a few days...so I decided to take advantage of being able to make something that had....MUSHROOMS!!! Oh yeah....I love mushrooms but hubby is mentally allergic to them...so I rarely get to eat them.  My lucky charm this evening is that youngest son just happens to be a mushroom fan like me....so I made a pasta dish loaded with lots of mushrooms for us to eat.  I sauteed some red and orange bell peppers, a diced zucchini and 1/2 lb of beautiful sliced mushrooms and then added in a thinly sliced Aidells Italian & Mozzarella Chicken Sausage for flavor.  I poured a jar of Bertolli Tomato and Basil Sauce over everything and gave it a few good shakes of cayenne and let it simmer for about 30 minutes while I cooked the pasta, made the salad and heated a small loaf of Tuscan bread.  I snapped a few pics below for you to see.  It was a delicious meal...but the best part of it (other than getting to have dinner with my youngest son) was that I got to eat mushrooms with abandon!  ;-)  They say it's the little things in life that count...and I got to eat some awesome little mushrooms tonight.
